Gulab Jamun is a very famous dessert in the Indian subcontinent. It is made in all festivals, celebrations, and marriages. In India, any celebration is incomplete without making this dessert. Kala Jamun is a modified version of Gulab Jamun, which has to add stuffing to it. Anybody with a sweet tooth has a special love for these. Gulab Jamun is made from milk solids that are then fried and dipped in sugar syrup. It is most famous in North India.

What is Gulab jamun and Its History?

What is it made of

The balls are then fried in clarified butter or ghee. After frying it, they need to be soaked in sugar syrup for 3-4 hours. Khoya can be made at home also. While at Indian homes we also use milk powder to make this recipe. Saffron and Rosewater play a special role in this dessert to make it more aromatic.

How to make without Mawa/Khoya

In this recipe, I will show you how to make them with milk powder. Milk powder is very easily available at home. So to make the process hassle-free we do not use khoya. These are as tasty as the ones made from khoya. Make this recipe to make everyone a fan of your culinary skills. Trust me if in this, if you do it right you will never get tired of making this. Making this can be a till tricky for some people. But if you follow the given instructions carefully your Kala Jamuns will turn out perfectly.

Ingredients of Kala Gulab Jamun Recipe

  • Sugar- 2 Cup
  • Cardamom- 2
  • Nirbhe Jal Natural Saffron
  • Lemon Juice – 1/2 tsp
  • Milk Powder – 1 Cup
  • Sooji/ Rava – 1 tbsp
  • All-Purpose Flour / Maida मैदा – 2 tbsp
  • Ghee / Oil – 1 tbsp
  • Baking Soda – 2 pinch
  • Milk – 1 Cup
  • Chopped Pista
  • finely Chopped Cashew Nut
  • finely Chopped Almonds- 2 tbsp
  • Sugar – 1 tsp
  • Cardamom powder- 1 /4 tsp
  • Saffron water – 1 tbsp

Materials

  • 2 cup Sugar
  • 2 cup water
  • 2 Cardamom

  • 2 tbsp All Purpose Flour / Maida
  • 1 tbsp Ghee / Oil
  • 2 pinch Baking Soda
  • 1 cup Milk 
  • Chopped Pista
  • finely Chopped Cashew Nut
  • 2 tsp finely Chopped Almonds
  • 1 tsp Sugar 
  • 1/4 tsp Cardamom powder
  • 1 tbsp Saffron water 

Instructions

  • To make Deleciuc Kala Gulab Jamun first we will prepare Sugar syrup and for this place a pan on flame.
  • Now add 2 cups of sugar, and add 2 cups of water and let the sugar melt n medium flame.
  • After the Sugar melted completely add 2 green cardamom, saffron strands and mix well and boil.
  • Now add 1/2 tsp of lemon juice and mix well.
  • Now check sugar syrup consistency.
  • Now turn off the flame and cover it with a lid.
  • Now take a bowl and add 1 cup of milk powder, 2 tbsp of all-purpose flour, 1 tbsp of ghee, and mix everything well with your hands.
  •  Now add 2 pinches of baking soda and mix well.
  • Now add 1 cup of milk in batches and prepare a soft dough.
  • Now cover it and keep it aside for 2 minutes.
  • Now take a small part of the dough and add it into a bowl to prepare Kala Jamun Stuffing.
  • Now add chopped pistachio, chopped cashew, 2 finely chopped almonds, 1 tsp of sugar, 1/4 tsp of cardamom powder, 1 tbsp of saffron water, and mix everything well.13 – Now prepare small bolls for stuffing.
  • Now take a part of the dough and prepare small balls.
  • Now Press with hands and add stuffing in mid of it.
  • Now cover it from all sides and make a smooth ball for Kala Gulab Jamun.
  • Now follow the same steps and prepare Kala gulab jamun balls from all dough.
  • Now place a pan on medium flame and add sufficient cooking oil and heat well.
  • After Oil becomes hot then turn the flame low and add prepared Kala gulab jamun balls to it
  • Now fry on all sides until the dark.
  • Now take them out from oil and add them into hot sugar syrup (sugar syrup must be hot).
  • Now put a lid on the sugar syrup pan and keep the pan aside for 1 hour.
  • Now your delicious Kala Gulab Jamun is ready and You Can Enjoy them.

Kala Gulab Jamun Recipe – Step By Step

1 – To make Deleciuc Kala Gulab Jamun, first place a pan on flame and add 2 cups of sugar, add 2 cups of water and let the sugar melt on medium flame.

2 – After the Sugar is melted, add two green cardamom and saffron strands and mix well and boil.

4 – Now check sugar syrup consistency and turn off the flame and cover it with a lid.
5 – Now, take a bowl and add 1 cup of milk powder, 2 tbsp of all-purpose flour, 1 tbsp of ghee, and mix everything well with your hands.

How to Serve

These can be served hot or at room temperature. It basically depends on how you like to have them. I prefer to heat them in the microwave before serving. It can also be eaten with Vanilla Ice cream. Do not forget to add freshly chopped dry fruits while serving it to the guests.

Notes– Tips and Tricks to make Soft and Fluffy Kala Jamuns

1 – Temperature of the oil- temperature of the oil should be low while frying to cook the balls completely. Otherwise, they will burn from outside and will be uncooked inside.

2 – Balls should be dipped completely in oil while frying- This is also done to make sure the balls are cooked fully. If some portion of the ball is not dipped fully it will also remain uncooked.

3 – Sugar syrup should be hot while adding the balls- If the sugar syrup is not hot the balls will not absorb it completely.

4 – Make sure the dough is soft- Soft dough makes soft Kala Jamuns. It is not possible to make the balls smooth and fluffy with hard dough. This is the most basic step in this recipe to get right.

5 – The balls should be smooth and crack-free- If the balls have cracks then the frying will not be uniform. Some portions will be overcooked and some will be undercooked. The sugar syrup will also not be absorbed uniformly.

6 – Before adding the whole batch, add a single ball to check whether it cracks- Sometimes even when everything seems to be fine there is some mistake that we make. In order to avoid wasting the whole batch, we should try with a single ball first. If that does not go fine try to make a few changes in the dough according to your judgment.
