Materials
For Dough
- 1 cup Semolina(सूजी)
- 1/2 cup All-Purpose Flour(मैदा)
- Salt as per taste
- 1/2 cup Water
- 1/4 tsp Turmeric Powder
For Filling
- 5 tbsp Gram Flour(बेसन)
- Salt (नमक)as per taste
- 1 tsp Red Chilli Powder (लाल मिर्च पाउडर)
- 1 tsp Oil (तेल)
- 1/2 tsp Baking Soda (बेकिंग सोडा )
- Oil for Frying
For Chaat
- 3 Boiled Potato(उबले आलू)
- 3 Chopped Chillies (हरी मिर्च)
- Black Salt (काला नमक)
- Salt (नमक)
- Red Chilli Powder (लाल मिर्च पाउडर)
- Chaat Masala (चाट मसाला)
- Coriander (धनिया)
- Boiled Green Moong Dal (हरी मूंग दाल)

Instructions
- To make Perfect Raj Kachori, we will first prepare Dough for Our Kachori, and for this, takes a Bowl and adds 1 cup of fine semolina.
- Now add 1/2 cup of all-purpose flour, salt as per taste.
- Now, take a bowl and add a cup of water and 1/4 tsp of turmeric powder and mix well.
- Now, little by little, add turmeric water into the flour and mix well; knead well for 3 – 4 minutes and prepare a soft dough.
- Now cover it with a wet cloth and let it rest for 10-15 minutes.
- Now, to make Raj kachori filling take a bowl and add 5 tbsp of gram flour, salt as per taste, 1 tsp of red chilli powder, 1 tbsp of oil, 1/2 tsp of oil baking soda.
- Now add 2 tbsp of water and mix well and prepare a thick paste.
- After 10-15 minutes, check the dough and knead again.
- Now pinch the ball size dough, tuck it, prepare round balls with your hand, and keep all balls always covered with a wet cloth).
- Now place a wide kadhai on flame and oil(Ensure the oil is less than 1/2 of kadhai) and heat well on medium-high flame.
- Now, take a dough ball and spread it with your fingers.
- Now add marble size gram flour mix in the centre of kachori.
- Now close it on all sides, make a round ball, remove the excess dough, press, and little flatten it.
- Now coat it with all-purpose flour, roll it with a rolling pin, and prepare a medium-thick puri.
- Now prepare puri from the remaining mix.
- Now add one puri into hot oil and splash oil on top, and fry; this will make the upper side of puri crispy.
- Now flip and fry until golden.
- After kachori turns golden, transfer it to a plate and fry the next kachori.
- Now, we will make raj kachori chaat, and for this, take a bowl and add two boiled potatoes( cut into cubes form) to it.
- Now add three chopped green chilli, sprinkle pepper powder, black salt, salt per taste, red chilli powder, chaat masala, chopped green coriander and mix well.
- Now, take a bowl and add boiled green moong dal, boiled chana.
- Now add little black salt, chaat masala, salt, red chill powder, roasted cumin powder and lemon juice, chopped coriander and mix well.
- Now, take a raj kachori and make a hole on it.
- Now add 2 tbsp potato filling, 2 tbsp moong dal filling, crispy Papdi.
- Now add Mix Namkeen, green chutney, tamarind chutney, curd.
- Now sprinkle red chilli powder, chaat masala, pepper powder, black salt and cumin powder.
- Now add a bit more green chutney, tamarind chutney, nylon Sev, mix Namkeen chopped coriander.
- Now add slit ginger, beetroot and chopped coriander fenugreek seeds.
- Now your Raj kachori chaat is completely ready, and you can enjoy it.

Raj Kachori Recipe – Step By Step
