- Methi/Fenugreek leaves – 250 gm
- Chopped Coriander – 2 to 3 tbsp
- Salt – 1 tsp
- Garlic
- Ginger
- Green Chilli – 2 to 3
- Cumin Seed – 1/2 tsp
- Fennel Seed – 1 tsp
- Water
- Wheat flour – 2 cup
- Gram flour – 2 tbsp
- Semolina – 4 tbsp
- Red Chili Powder – 1 tsp
- Coriander Powder – 1 tsp
- Asafoetida – 1/4 tsp
- Turmeric Powder
- Garam Masala – 1/2 tsp
- Carom Seed – 1/4 tsp
- Oil – 1 tbsp
- Oil for frying
For Instant Gajar Boondi Raita
- Curd – 1.5 cup
- Carrot – 1
- Chopped Green Chilli – 2
- Bundi – 4 tbsp
- Red Chilli Powder – 1 tsp
- Salt as per Taste
- Black Salt – 1/2 tsp
- Cumin Powder – 1tsp
- Oil – 1 tsp
- Mustard – 1 tsp
- Asafoetida
- Curry Leaves
Instructions
- To make the perfect Methi Puri, take 250 grams of Methi (fenugreek leaves), wash it, and finely chop it.
- Next step: take a wide plate, add chopped Methi, 2-3 tbsp of chopped coriander, and 1 tsp of salt, and mix well.
- Next step: take a grinding jar, add 10–12 garlic cloves, 1 inch of ginger, 2-3 green chilies, 1/2 tsp of cumin seeds, one teaspoon of fennel seeds, and a little water, and make a fine paste.
- Next step: check the Methi, add the prepared paste, 2 cups of wheat flour, two tablespoons of gram flour, and four tablespoons of fine semolina.
- Next step: add 1 tsp of red chili powder, 1 tsp of coriander powder, 1/4 tsp of asafoetida, one pinch of salt, 1/2 tsp of garam masala, 1 tsp of carom seeds, and 1 tbsp of oil, and mix everything well.
- Next step: cover the dough and let it rest for 5–10 minutes.
- After 10 minutes, check the dough and prepare small balls with it.
- Next step: one by one, take the prepared balls and roll them into medium thickness.
- Next step: place a pan on a flame, add oil for frying, and heat well.

- Next step: add one grated carrot, two chopped green chilies, and 4 tbsp of Boondi.
- Next step: add 1 tsp of red chili powder, salt per taste, 1/2 tsp of black salt, and 1 tsp of roasted cumin powder, and mix everything well.
- Next step: place a tempering pan on flame, add one teaspoon of oil, and heat well.
- After the oil is hot, add one teaspoon of mustard seeds, asafoetida, and curry leaves, and turn off the flame.
