Materials
- 2 tbsp Ghee
- 15 - 20 Chopped cashew
- 2 tbsp Kismis
- 3/2 tsp puffed lotus seeds/Makhane
- 1 liter Milk
- 3/4 cup Sugar
- 3 - 4 pcs Crushed Cardamom
Instructions
- To make the perfect Makhana Kheer, place a pan on flame, add 2 tbsp of ghee, and melt.
- Now add 15-20 roughly chopped cashew and roast on medium flame.
- After cashew turns a little golden, transfer them to a plate.
- Now add 2 tbsp of raisins, and roast a little until golden.
- Now transfer the raisins to a plate.
- Now add 3/2 cup of Makhana/Puffed Lotus seeds and roast until crisp.
- After the Makhana turns golden and crispy, transfer them to a plate and let it cool.
- Now, place a pan on flame, add 1 liter of milk and boil on medium flame.
- Now, take a grinding jar, add roasted Makhana, grind and make a coarse powder.
- After the milk turns thick, add makhana powder and mix well.
- Now add saffron strands soaked into milk, mix well, and boil for 4-5 minutes.
- After 4-5 minutes, add 1 tsp of cardamom powder and mix well.
- Now add 3/4 cup of sugar and mix well on medium flame.
- Now add roasted dry fruits, mix everything well, and boil until thick.
- After the kheer turns thick, garnish the Makhana Kheer with chopped pistachio and turn off the flame.
