Today I am going to share with you the recipe for making Gujarat’s famous mini Matar kachori.

The stuffing of mini Matar kachori is different from other Matar kachori and with the help of this recipe, this mini kachori becomes even more tasty and crispy.

This recipe is made with a little twist, so let’s know about our recipe.

Kachori should have started in Uttar Pradesh, India. In these states, it is typically around straightened ball made of fine flour loaded up with a stuffing of prepared combination of yellow moong dal or urad dal (squashed and washed pony beans), besan (squashed and washed gram flour), Black pepper, red stew powder, salt and different flavors.

In Gujarat, it is generally a round ball made of flour and batter loaded up with a stuffing of yellow moong dal, dark pepper, red bean stew powder, and ginger glue.

  • Ginger – 1 inch
  • Garlic – 6 cloves
  • Green Peas – 1 cup
  • Oil – 2 tbsp
  • Cumin Seeds – 1/2 tsp
  • Asafoetida – 2 pinch
  • White Sesame Seeds – 1 tbsp
  • Baking Soda – 2 pinch
  • Salt as per taste
  • Sugar – 1 tsp
  • Desiccated Coconut – 4 tbsp
  • Raisins – 1 tsp
  • Chopped Cashewnuts – 1 tbsp
  • Garam Masala – 1/2 tsp
  • Chopped Coriander
  • Spring Onion Green – 4 tbsp
  • Lemon Juice – 1 tsp
  • Oil for frying

Materials

  • 1 cup All-Purpose Flour
  • 1/4 cup Wheat Flour 
  • 1 tsp Ajwain 
  • Salt as per taste
  • 3 tbsp Oil 
  • 1 tbsp Lemon Juice
  • 3 Green Chillies 
  • 1 inch Ginger 
  • 6 clove Garlic 
  • 1 cup Green Peas 
  • 2 tbsp Oil 
  • 1/2 tsp Cumin Seeds
  • 2 pinch Asafoetida 

Instructions

  • To make crispy mini matar kachori, first of all, take a wide bowl and add 1 cup of all-purpose flour, 1/4 cup of wheat flour, 1 tsp of ajwain, salt as per taste, 3 tbsp of oil, 1 tbsp of Lemon Juice and mix everything well.
  • Now add Water and prepare a soft dough.
  • Now you put a lid on it and let it rest for 10 minutes.
  • Now take a grinding jar and add 3 red chili, 1 inch Ginger, 6 garlic cloves and make a paste of it in the grinding jar.
  • After grinding add 1 cup of peas, and grind coarse it in a grinding jar.
  •  Now put a pan on gas on medium flame and add 2 tbsp of oil and heat it.
  • After the oil is heated add 1/2 tsp cumin seeds, 2 pinch asafoetida, 1 tbsp of white sesame seeds, and fry everything.
  • Now add 2 pinches of baking soda and saute well.
  • Now add crushed matar mix in the pan and cook on medium flame.
  • After cooking it for some time add salt as per taste, 1 tsp of sugar in it, and mix everything well.
  • Now put a lid on the pan and cook it for 2 to 3 minutes on low flame.
  • After Cooking it for 2 minutes remove the lid and add 4 tbsp of Desiccated coconut, 1 tsp of raisins, 1 tbsp chopped cashew nuts, 1/2 tsp of garam masala, and cook it for some time.
  • Now add chopped coriander, 4 tbsp of spring onion greens, and mix everything well.
  • Now add 1 tsp of lemon juice in it and mix everything and cook for 2 to 3 minutes.
  • Now Matar kachori stuffing is ready and take it out on a plate and let it cool.
  • After stuffing becames cool, make small balls of it.
  • Now you make a small ball from the dough and roll it thin with the help of a rolling pin.
  • Now you place the prepared stuffing ball in it.
  • Now close it with all the sides and make their small balls.
  • Now take a pan and put it on the gas and put oil in it for deep frying and heat it on medium flame.
  • Now flame the flame and add the prepared kachori to it and fry it till it becomes golden.
  • Now your tasty crispy mini pea kachori is ready and you can enjoy them.

Mini Matar Kachori Recipe – Step By Step

1- To make crispy mini Matar kachori, first of all, take a wide bowl and add 1 cup of all-purpose flour, 1/4 cup of wheat flour, 1 tsp of ajwain, salt as per taste, 3 tbsp of oil, 1 tbsp of Lemon Juice and mix everything well.

11 – Now put a lid on the pan and cook it for 2 to 3 minutes on low flame.
12- After Cooking it for 2 minutes remove the lid and add 4 tbsp of Desiccated coconut, 1 tsp of raisins, 1 tbsp chopped cashew nuts, 1/2 tsp of garam masala, and cook it for some time.
13 – Now add chopped coriander, 4 tbsp of spring onion greens, and mix everything well.

14 – Now add 1 tsp of lemon juice in it and mix everything and cook for 2 to 3 minutes.
15 – Now Matar kachori stuffing is ready and take it out on a plate and let it cool.
