  • Clarified Butter – 1 tsp

Materials

  • Indian Gooseberry – 500 gm
  • Ginger
  • Suger – 500 gm
  • Salt as per Taste
  • Black Salt – 1/2 tsp
  • Lemon Juice – 1 tbsp
  • Corn flour – 1. 5 tbsp
  • Clarified Butter – 1 tsp

Instructions

  • To make the perfect Amla Candy, take 500 grams of gooseberry, wash, and clean.
  • Next step: place a pan on flame, add water, and boil well.
  • Next step: place a strainer plate on the Kadhai and place the gooseberry on the plate.
  • Next step: cover the lid and cook the gooseberry for 10–12 minutes.
  • After 10–12 minutes, turn off the flame, transfer the gooseberries to a plate, and let them cool.
  • Next step: de-seed the gooseberry and break it into small pieces.
  • Next step: take a grinding jar, add all the gooseberry pieces and a little grated ginger, and make a fine paste.
  • Next step: place a pan on flame, add prepared paste, 500 grams of sugar, salt as per taste, and 1/2 tsp of black salt, and cook on medium flame.
  • After the gooseberry mixture turns a little thick, add ONE tablespoon of lemon juice and one tablespoon of corn flour paste (take 1.5 tablespoons of corn flour, add a little water, and prepare a paste), and mix well.
  • After the gooseberry mixture turns thick, add one tablespoon of ghee, mix well, and cook until the mix starts leaving the pan.
  • Next step: take a tray, place a piece of butter paper on it, and grease it with ghee.
  • After the candy mixture leaves the pan, turn off the flame, transfer the candy mixture into the tray, and spread it well.
  • Next step: leave the candy tray under the fan and let it set for 30–40 minutes.
  • After 30–40 minutes, de-mold the candy on a platform and cut it into small pieces.
  • Next step: take a bowl, add sugar powder, Chaat masala, and mix well.
  • Next step: add the candy pieces to the bowl and coat well.
