  • Aniseed (Fennel Seeds) – 1 tbsp
  • Cumin Seed – 1 tsp
  • Dried Red Chili – 4 to 5
  • Oil – 3 tbsp
  • Asafoetida – 1/4 tsp
  • Gram flour – 4 to 5 tbsp
  • Red Chili Powder – 1/2 tsp
  • Turmeric Powder – 1/2 tsp
  • Dry mango Powder – 1 tsp
  • Garam Masala – 1 tsp
  • Salt as per Taste
  • Black Salt – 1/2 tsp
  • Coriander Powder – 1 tbsp
  • Kasoori Methi – 1 tbsp

  • Moong Dal – 2 Cup
  • Wheat flour – 2 cup
  • Salt – 1 tsp
  • Carom Seed – 1 tsp
  • Clarified Butter – 4 tbsp
  • Coriander Seed – 2 tbsp
  • Black Peppercorns – 1 tsp
  • Aniseed (Fennel Seeds) – 1 tbsp
  • Cumin Seed – 1 tsp
  • Dried Red Chili – 4 to 5
  • Oil – 3 tbsp
  • Asafoetida – 1/4 tsp
  • Gram flour – 4 to 5 tbsp
  • Red Chili Powder – 1/2 tsp
  • Turmeric Powder – 1/2 tsp
  • Dry mango Powder – 1 tsp
  • Garam Masala – 1 tsp
  • Salt as per Taste
  • Black Salt – 1/2 tsp
  • Coriander Powder – 1 tbsp
  • Kasoori Methi – 1 tbsp

Instructions

  • To make the perfect Moong Dal Kachori, take 2 cups of Moong dal, and soak it for 2 hours.
  • After 2 hours, transfer the soaked Moong dal into a strainer and drain the water completely.
  • Next step – in a wide plate, add 2 cups of wheat flour, 1 tsp of salt, 1 tsp of carom seeds, and 4 tbsp of ghee, and mix well.
  • Next step – add water in batches and prepare a soft dough.
  • Next step – cover the dough and let it rest for 10 minutes.
  • Next step – take a grinding jar, add soaked Moong dal, and prepare a coarse paste.
  • Next step – take a small grinding jar, add 2 tbsp of coriander seeds, 1 tsp of peppercorns, 1 tbsp of aniseeds, 1 tsp of cumin seeds, and 4-5 dry red chilies, and make a coarse powder.
  • Next step – place a pan on the flame, add 3 tbsp of oil, and heat well.
  • Next step – add the prepared masala powder and 1/4 tsp of asafoetida, and roast well.
  • Next step – add 4-5 tbsp of gram flour, mix well, and roast.
  • Next step – add the prepared dal mixture and mix everything well.
  • Next step – add 1/2 tsp of red chilli powder, 1/2 tsp of turmeric powder, 1 tsp of dry mango powder, 1 tsp of garam masala, salt per taste, 1/2 tsp of pepper powder 1 tbsp of coriander powder, 1 tbsp of Kasoori methi, and mix everything well.
  • After the moisture is gone, turn off the flame and let the stuffing cool.
  • Next step – prepare small balls with the stuffing (you can also store the stuffing for one month in the fridge).
  • Next step – check the dough, knead one more time, and prepare small balls with the dough.
  • Next step – take a ball and give it a bowl shape (Keep it thick in the middle and thin on the edges).
  • Next step – place the stuffing ball into the dough ball, seal the kachori well, and flatten it like in the following image.
  • Next step – prepare the Kachori with the remaining dough and stuffing.
  • Next step – place a pan on the flame, add oil for frying, and heat.
  • After the oil is medium hot, add the prepared Kachori and fry the Kachori until golden and crispy.
  • After the Kachori turns golden and crispy, transfer all the kachori to a plate and fry the next batch.
