- Mawa/ Khoa – 1 cup 200 gm
- Jaggery – 3/4 cup 150 gm

Instructions
- Roast the Sesame Seeds: To begin making the perfect Til Mawa Roll Gajak, place a pan on low flame and add 150 grams of sesame seeds. Roast the seeds gently for 2–3 minutes until aromatic. Turn off the flame and transfer the roasted sesame seeds to a plate. Keep aside 4–5 tablespoons of whole sesame seeds in a separate bowl for later use.
- Grind the Sesame Seeds: Allow the sesame seeds to cool completely. Once cooled, add the remaining seeds to a grinding jar and grind them into a coarse powder.
- Prepare the Mawa Base: Heat a kadhai on low flame and add 200 grams of mawa (khoya). Stir continuously to melt the mawa evenly without burning.
- Add Jaggery: Once the mawa has melted, add 3/4 cup of crushed jaggery to the kadhai. Continue stirring and cooking on low flame until the jaggery fully dissolves and blends with the mawa.
- Add Flavor and Texture: Turn off the flame and quickly mix in 1 teaspoon of cardamom powder, the prepared sesame powder, and 2 tablespoons of the reserved whole sesame seeds. Combine well until the mixture starts leaving the sides of the pan.
- Prepare the Rolling Base: Lay a sheet of butter paper on a clean platform. Evenly spread the reserved whole sesame seeds across the butter paper to coat the base.
- Shape the Roll: Transfer the warm roll mixture onto the butter paper. Using a spatula or your hands, spread the mixture evenly into a rectangular shape. Sprinkle a generous layer of chopped dry fruits over the spread mixture.
- Roll It Up: Carefully roll the mixture into a cylindrical shape, using the butter paper to guide and shape the roll. Ensure the roll is tight and compact.
