Materials
- Semolina – 1/2 cup
- Curd – 1/2 Cup
- Ginger And Green Chili -1 tbsp
- Oil – 1/4 tsp
- Salt as per Taste
- Sugar-1/2 Tsp
- Water
For Dhokla Layer
- Gram flour – 1 cup
- Ginger and Green Chili paste-1 tbsp
- Sugar – 1/2 Tsp
- Salt as per Taste
- Lemon Juice – 2 tbsp
- Curd – 2 tbsp
- Turmeric Powder – 1/4 tsp
- Eno fruit salt – 1tsp
For Tempering
- Oil – 2 tbsp
- Musturd seeds – 1 tsp
- Jeera -1/2 tsp
- Sesame – 1 tsp
- Curry leaves
- Spilieted green chili
- Lemon juice -1 tbsp
For Green Chutney
- Coriander Leaves/Hara Dhania
- Mint Leaves/Pudina Green Chili – 2-3
- Cloves/Laung
- Lemon Juice -1 tbsp
- Salt as per Taste
- Black Salt – 1/2 tsp
- Asafoetida/Hing -1 pinch
- Ice Cubes
- Eno fruit salt -1/2 tsp
Instructions
- Firstly, in a bowl, take 1/2 cup of semolina, 1/2 cup of curd, 1 tsp of ginger-green chilli paste, 1/4 tsp of oil, salt as per taste, 1/2 tsp of sugar and mix everything well.
- Next step – Little by little, add water and prepare a thick batter.
- keep the batter aside and let it rest for some time.
- In a grinding jar, add a handful of coriander leaves, mint leaves, 1 tbsp of peanuts, 2 green chillies, 1-inch ginger, and 4 garlic cloves.
- Next step, add 1 tbsp of lemon juice, salt as per taste, 1/2 tsp of black salt, 1 pinch of asafoetida, and 2-3 ice cubes.
- Next Step – grind everything well and make a fine paste.
- Now take a cake tine and grease it with oil.
- Next step – Into suji batter, add 1/2 tsp of Eno fruit salt, some drops of water and mix well in one direction(Add more water if your batter turns thick).
- Next step – transfer the batter into the greased tray and spread well.
- Next step – place a kadhai on flame, add 1 glass of water and place a stand into it.
- Next step – Close the lid and boil the water.
- After the water starts boiling, place the cake tin into Kadhai, close the lid and cook for 6 minutes on medium-high flame.
- Into another bowl, add 1 cup of gram flour, 1 tsp of ginger-green chilli paste, 1 tsp of sugar, salt as per taste, 2 tbsp of lemon juice, 2 tbsp of curd and 1/4 tsp of turmeric powder.
- Next step – little by little, add water and prepare a thick consistency batter.
- Next step, add some drops of oil and whisk well until its colour changes to light colour.
- Now cover the batter and let it rest for 2 minutes.
- After 6 minutes, check the Sooji Dhokla, and take it out to a platform.
- After the suji dhokla turns a little cool, apply the prepared green chutney to it.
- Next step – check the Khaman Batter, add 1 tsp of Eno fruit salt, some drop of water and mix well until it turns floppy.
- Now transfer the Khaman Batter into Suji Dhokla tin and spread well.
- Next step – Keep the Dhokla Tin into Kadhai for steaming.
- Close the lid and steam the Dhokla for 7-8 minutes on medium-high flame.
- After 7-8 minutes, turn off the flame, check the Dhokla and let it a little cool.
- Next step – place a pan on flame, add 2 tbsp of oil and heat well.
- After the oil is hot, add 1 tsp of mustard seeds, 1/2 tsp of cumin seeds, 2 pinches of asafoetida, and 1 tsp of sesame seeds.
- After the tempering starts crankling, turn off the flame, add some curry leaves, slitted green chilli, 1 tbsp of lemon juice and mix well.
- Next step – de mould the Dhokla and cut it into pieces.
- Next step – pour the prepared tempering on the Dhokla.
