For Tempering

  • Oil – 1 tsp
  • Butter – 1 tbsp
  • Split Green chilli – 2
  • Coriander Leaves

For Pav

  • Oil
  • Butter – 1 tbsp
  • Pav bhaji masala – 1/2 tsp
  • Coriander Leaves/Hara Dhania
  • Prepared Bhaji

Instructions

  • To make the perfect street-style Pav Bhaji, place a cooker on the flame, add one tablespoon of oil and one tablespoon of butter, and heat well.
  • Next step: add 1 tsp of cumin seeds, 1/4 tsp of asafoetida, and two finely chopped onions, and roast well until golden on medium to high flame.
  • Next step: take a grinding jar, add 1 roughly chopped onion, 1 tbsp of Kashmiri red chili powder, and 1/2 chopped beetroot, and make a coarse paste.
  • After the onion turns pink, add ginger-garlic-green chili paste, cook well, and make a fine paste.
  • After roasting well, add the prepared paste and salt per taste and cook on medium heat.
  • After two minutes, add 2 tablespoons of Kashmiri red chili powder and 1/4 teaspoon of turmeric powder, mix well, and cook with a covered lid.
  • After roasting, add two tablespoons of Pav Bhaji Masala and 1 tsp of coriander powder, and mix well.
  • After 30–40 seconds, add one roughly chopped carrot, one chopped capsicum, one cauliflower, 1/2 cup of green peas, 1/2 cup of chopped french beans, and two chopped potatoes. Mix well and cook for 5 minutes.
  • After 5 minutes, add 2 cups of water, mix well, close the lid, and cook until six whistles on a high flame.
  • After six whistles, turn off the flame and let the pressure release completely.
  • Next step: turn on the flame and mash the bhaji with the help of a masher.
  • Next step: place a tempering pan on flame, add one teaspoon of butter, and melt well.
  • Next step: add two split green chilies and chopped coriander and mix well.
  • Next step: add the prepared tempering and one tablespoon of lemon juice to the bhaji, mix well, and cook for 2 minutes.
  • After 2 minutes, turn off the flame, and your perfect bhaji is ready.
  • Next step: place a Tawa on flame, add a little oil and one tablespoon of butter, and heat well.
  • Next step: add a little pav bhaji masala, chopped coriander, and one tablespoon of prepared bhaji and mix well.
