What is Mix Veg Khichdi?
Mixed vegetable khichdi is a tasty and wholesome Indian rice dish made with rice, lentils, and an assortment of vegetables. It is comfort food that is easy to digest.
To make mixed veg khichdi, rice and lentils like toor dal, moong dal, or masoor dal are cooked together with vegetables like potatoes, carrots, green beans, green peas, cauliflower, and green chillies.
The rice and dals are first boiled in water until soft. Then the vegetables are added and cooked further till they are tender. Spices like cumin, turmeric, garlic, ginger, green chillies, curry leaves and asafoetida are used for tempering.
Some salt is added for taste. Finally, a tadka of ghee and cumin seeds is poured over the khichdi before serving.
The blend of wholesome rice and dal with vegetables and aromatic spices makes mixed veg khichdi a hearty, comforting, and nutritious dish that is loved by both kids and adults alike. It can be eaten on its own or served with papad, pickle, raita or a vegetable side dish.

Materials
- 1 cup Rice
- 1 cup Moong Dal
- 1 tbsp. Ghee
- 1 Bay Leaf
- 1 Chopped Carrot
- 10 Chopped Beans
- 2 Chopped Potato
- Green Peas
- 6 cup Water
- Salt as per taste
- 1 tbsp. Turmeric Powder
- 2 tbsp. Ghee/Oil
- 1 tbsp. Mustard Seeds
- 1 tbsp. Cumin Seeds
- 1/4 tbsp. Asafetida
- 1 tbsp. Chopped Onion
- 2 tbsp. Grated Ginger
- 1 tbsp. Chopped Garlic
- Curry leaves
- 3 Green Chills
- 3 Red Chills
- 2 Chopped Tomato
- Salt as per taste
- 2 tbsp. Red Chili Powder
- 1/2 tbsp. Turmeric Powder
- 1 tbsp. Coriander Powder
- 1 tbsp. Garam Masala
Instructions
- To make Perfect Mix Veg Masala Dal Khichdi, first take a bowl and add 1 cup of rice and 1 cup of moong dal.
- Now wash them with water 2-3 times and soak them in the water for 15 minutes.
- After 15 minutes, remove the excess water and keep it aside.
- Now, place a cooker on medium flame, add 1 tbsp of ghee, and melt.
- After ghee is hot, add one bay leaf, one chopped carrot, ten chopped beans, two chopped potatoes, and stir fry.
- After 1 minute, add the soaked rice-dal mixture and mix well.
- Now add 1/2 cup of green peas and mix well.
- Now add 6 cups of water, salt as per taste,1 tsp of turmeric powder, and mix everything well.
- Now, close the lid and cook until four whistles.
- After the four whistles, turn off the flame and let the pressure release.
- After pressure release completely, remove the lid, chick your Khichdi, remove the bay leaf, and keep the khichdi aside.
- Now, to prepare Tadka first, place a pan on flame, add 2 tbsp of ghee, and melt.
- After ghee melts, add 1 tsp of mustard seeds, 1 tsp of cumin seeds, 1/4 tsp of asafoetida, one chopped onion, and stir fry.
- After some time, add 2 tsp of grated ginger, 1 tsp of chopped garlic, curry leaves, and mix well.
- Now add three chopped chilli, three dry red chilies, two chopped tomatoes, salt as per taste and mix well and cook.
- After tomatoes turn mashy, add 2 tsp of red chilli powder, 1/2 tsp of turmeric powder, 1 tsp of coriander powder, 1 tsp of garam masala, mix everything well, and cook until its start releasing the ghee.
- After the mix starts releasing the ghee, add cooked khichdi into the pan, mix well(add hot water if required to adjust the consistency), and cook for 1 minute.
- After 1 minute, turn off the flame and garnish it with chopped coriander.
- Now your Masala Mix veg Khichdi is completely ready, and you can enjoy it.

16 – After tomatoes turn mushy, add 2 tsp of red chilli powder, 1/2 tsp of turmeric powder, 1 tsp of coriander powder, and 1 tsp of garam masala, mix everything well, and cook until it start releasing the ghee.
17 – After the mix starts releasing the ghee, add cooked khichdi into the pan, mix well(add hot water if required to adjust the consistency), and cook for 1 minute.
18 – After 1 minute, turn off the flame and garnish it with chopped coriander.
19 – Now your Masala Mix vegetable Khichdi is completely ready, and you can enjoy it.
Tips to make the Perfect Mix Veg Khichdi
- Choose the right mix of dals like toor dal, moong dal, masoor dal to give khichdi a nice texture.
- Wash and soak rice and dals for at least 30 minutes before cooking. This makes them cook faster.
- Chop or grate the vegetables uniformly for even cooking. Good options are carrots, beans, peas, potato, cauliflower.
- Start by boiling dals in water until almost cooked. Then add rice and vegetables.
- Cook on low-medium flame, stirring occassionally till rice and veggies are fully cooked. Add more water if required.
- For tempering, heat ghee and add cumin seeds. Then add asafoetida, curry leaves, ginger-garlic paste. Pour this over khichdi.
- Sprinkle garam masala and lemon juice before serving. You can also garnish with coriander leaves.
- Add salt as per taste, but don’t make it very spicy for kids. You can adjust spice levels for adults.
- Ghee and curd add nice flavor. But use less oil/ghee if you want a healthier version.
