Ingredients List

  • Channa Dal/Split Pea – 1 cup
  • Dry Red Chillies – 2
  • Cinnamon Stick – 1 inch
  • Ginger – 1 inch
  • Green chillies – 2
  • Garlic – 6-7 cloves
  • Cumin Seeds – 1 tsp
  • Fennel Seeds – 1 tsp
  • Curry Leaves – 10-12
  • Asafoetida – 1/4 tsp
  • Finely Chopped Onion – 1
  • Finely Chopped Coriander
  • Salt as per taste
  • Rice Flour – 1 tbsp (optional)
  • Warm Cooking Oil – 1 tsp
  • Cooking Oil for Deep Fry
  • Oil – 1 tbsp
  • Roughly Chopped Tomato – 2
  • Dry Red Chillies – 2
  • Salt as per taste
  • Channa Dal – 2 tbsp
  • Tamarind Pulp – 1 tbsp
  • Oil – 1 tsp
  • Mustard Seeds – 1/2 tsp

Materials

  • 1 cup Channa Dal/Split Pea
  • 2 Dry Red Chilies
  • 1 inch Cinnamon Stick
  • 1 inch Ginger 
  • 2 Green chilies
  • 6-7 cloves Garlic 
  • 1 tbsp. Cumin Seeds
  • 1 tbsp. Fennel Seeds
  • 10-12 Curry Leaves
  • 1/4 tbsp. Asafoetida 
  • 1 Finely Chopped Onion 
  • Finely Chopped Coriander
  • Salt as per taste
  • 1 tbsp. Rice Flour
  • 1 tbsp. Warm Cooking Oil
  • Cooking Oil for Deep Fry
  • 1 tbsp. Oil 
  • 2 Roughly Chopped Tomato
  • 2 Dry Red Chilies
  • Salt as per taste
  • 2 tbsp. Channa Dal 
  • 1 tbsp. Tamarind Pulp 
  • 1 tbsp. Oil 
  • 1/2 tbsp. Mustard Seeds
  • 2 pinch Asafoetida 
  • Curry Leaves

Instructions

  • To make crispy crunchy masala vada, first of all, take 1 cup of Split pea and soak it in water for 3 to 4 hours.
  • Now take a grinding jar and put in it 2 dry red chilies, 1-inch cinnamon stick, 1-inch ginger, 2 green chilies, 4- cloves, tbsp. cumin seeds, 1 tbsp. fennel seeds, 10 – 12 curry leaves, 1/4 tbsp. asafetida and grind them all.
  • Now you keep 2 tbsp. dal separately and grind the remaining dal in a grinding jar.
  • After grinding the dal, transfer it into a bowl.
  •  Now you add 1 finely chopped onion, 2 tbsp. soaked channa dal, finely chopped coriander, salt as per taste, 1 tbsp. rice flour, 1 tbsp. warm oil, and mix everything well.
  • Now make small tikkis of the mix.
  • Now you place it on the gas, put oil in it to deep fry, and heat it.
  • Now when the oil gets hot, fry all the vada well on medium flame.
  • Now when it is golden then take a plate out of it.
  •  Now we will make vada chutney, first of all, you put a pan on the gas and add 1 tbsp of oil to it and now you put 2 chopped onions in it and cook it well.
  • When the onion becomes slightly transparent then add 4 dry red chilies and fry it.
  • When the onion is cooked well then you put in it 2 finely chopped tomatoes, salt as per taste, 2 tbsp. chana dal, and also cook them well.
  • When the tomato is cooked well then add 1 tbsp. tamarind pulp and mix it well.
  • Now turn off the gas and let the mixture cool down.
  • Now when the mixture cools down, then grind it finely in a grinding jar.
  • Now we’ll put Tadka and for this, you take a small pan and put 1 tbsp. of oil in it, and heat it on the gas.
  • When the oil is hot, add 1/2 tbsp. mustard seeds, 2 pinch asafetida, some curry leaves, and heat it a little.
  • Now your chutney is ready in this sauce.
  • Now you can serve vada and chutney and enjoy them.

Masala Vada Recipe – Step By Step

7 – Now you place it on the gas, put oil in it to deep fry, and heat it.
8 – Now when the oil gets hot, fry all the vada well on medium flame.

10 – Now we will make vada chutney, first of all, you put a pan on the gas and add 1 tbsp of oil to it and now you put 2 chopped onions in it and cook it well.

12 – When the onion is cooked well then you put in it 2 finely chopped tomatoes, salt as per taste, 2 tbsp. chana dal, and also cook them well.
13 – When the tomato is cooked well then add 1 tbsp. tamarind pulp and mix it well.
14 – Now turn off the gas and let the mixture cool down.
15 – Now when the mixture cools down, then grind it finely in a grinding jar.

16 – Now we’ll put Tadka and for this, you take a small pan and put 1 tbsp. of oil in it, and heat it on the gas.
17 – When the oil is hot, add 1/2 tbsp. mustard seeds, 2 pinch asafetida, some curry leaves, and heat it a little.
18 – Now your chutney is ready in this sauce.
19 – Now you can serve vada and chutney and enjoy them.
