What is Malai kulfi and its History?
Kulfi or Qulfi (/kʊlfiː/) is a frozen dairy dessert beginning in the Indian subcontinent in the sixteenth century. It is frequently depicted as “customary Indian frozen yogurt”.
It comes in different flavors. The more customary ones are cream (malai), rose, mango, cardamom (elaichi), saffron (kesar or zafran), and pistachio.
Kulfi or Qulfi is a Hindustani word got from the Persian Qufli (قفلی) signifying “covered cup”.The dessert probably began in the Mughal Empire in the sixteenth century. The combination of thick dissipated milk was at that point well known in the sweet dishes in the Indian subcontinent.
KULFI is served generally in a “matka” in Hindi. A matka is an earthen cup and is a prestigious brand name that supports the way that this pastry is interesting and respected in Delhi.

Materials
- 2 liters Milk
- 1 cup Sugar
- 1/2 tsp Cardamom Powder
For Rose Malai Kulfi
- 3 drops Rose Essence
- 2 drops Rose Color
For Pista Malai Kulfi
- 1 tbsp Chopped Pista
- 2 drops Pista Flavour & Color
For Shahi Malai Kulfi
- 1 tbsp Mixed Dry fruits
- 1 tsp Desiccated Coconut
- Saffron Strands
For Badam Malai Kulfi
- 1 tbsp Chopped Almonds
Instructions
- To make Malai Kulfi Place a Heavy based Kadahi on low flame.
- Now add 2 tbsp of water after this add 2 liters of Milk( Don’t take Boiled Milk).
- Now stir continuedly on low flame until it becomes 1/3rd of quantity ( Scrape sides and mix into Milk).
- When Milk becomes half then add 1 cup of sugar and boil until 1/3 of the quantity.
- Now if milk forms a coating on the spatula this means the milk is ready to make Kulfi.
- Now turn Off the flame and let it cool completely.
- Now take a Grinding jar and add boiled cool milk to it and churn for 30 Seconds.
- Now transfer into a bowl and add 1/2 tsp of cardamom powder and mix well.
- Now to make 5 Different flavors of kulfi divide milk into 5 different bowls.
- Now to make Pistachio flavor Kulfi take 1 Bowl of Kulfi Mix and add 1 tbsp of finely chopped pistachio and 2 drops of pistachio flavor & color and mix well.
- Now to make Rose flavor Kulfi take 1 bowl of Kulfi Mix and add 3 drops of rose essence, and 2 drops of red color, and mix well.
- Now to make Kesar/saffron Malai Kulfi take 1 Bowl of Kulfi Mix and add 1 pinch of saffron strands (soaked into 1 tbsp of warm milk) and 2 drops of Kesar food color and mix well.
- Now to make Shahi Malai Kulfi take 1 Bowl Of Kulfi Mix and add 1 tbsp of chopped Mixed dry Fruits, saffron strands, 1 tsp of desiccated coconut Powder.
- Now to make Almonds Flavor take 1 Bowl of Kulfi Mix and add 1 tbsp of chopped almonds and mix well.
- Now all flavors are ready.
- To Set all Kulfi take any Kulfi Mould and place them into Glass.
- Now fill kulfi mix into all Moulds.
- Now cover all Mould with foil/butter paper.
- Now cut on top of foil paper and place kulfi stick to it.
- Now place all kulfi into the freezer for 6 to 7 hours to set it.
- After 7 Hour take Kulfi out from the freezer.
- Now to de-mold all Kulfi take a bowl and fill it with water.
- Now turn the mold once in water and with the help of hands take out the kulfi.
- Now follow the same steps and de-mold all Kulfi.
- Now your Matka Malai Kulfi is completely Ready and You can Enjoy them.
