In this post, I am going to share an easy and little different recipe for making South one of the most famous dish Maddur Vada.

This is a very simple recipe to make at home and in this post, I will also share a recipe for making chutney to make our Maddur Vada testier. so without wasting any time let’s start this recipe.

What is Maddur Vada and its History?

Maddur vada, otherwise called Maddur vade (Kannada: ಮದ್ದೂರು ವಡೆ[needs kn IPA]) (articulated “mama ddur vah-daa”, “mama ddur vah-dey”), is a flavorful waste sort nibble from South India.

Ingredients of Maddur Vada Recipe

  • Green Peas – 1/2 cup
  • Garlic – 6 cloves
  • Green Chilies – 2
  • Ginger – 1/2 inch
  • Rice Flour – 1 cup
  • Gram Flour – 1/2 cup
  • All-Purpose Flour – 1/2 cup
  • Red Chilli Flakes – 1 tsp
  • Split Bengal Dal – 1 tbsp
  • Roasted Peanuts – 1 tbsp
  • Cumin Seeds – 1/2 tsp
  • Asafoetida – 2 pinch
  • Chopped Onion – 1
  • Chopped Curry Leaves
  • Chopped Coriander
  • Hot Oil – 3 tbsp
  • Oil for frying

Materials

  • 1/2 cup Green Peas
  • 6 cloves Garlic 
  • 2 Green Chilies 
  • 1/2 inch Ginger 
  • 1/2 cup Rice Flour 
  • 1/2 cup Gram Flour
  • 1/2 cup All-Purpose Flour 
  • 1 tsp Red Chilli Flakes
  • 1 tbsp Split Bengal Dal
  • 1 tbsp Roasted Peanuts
  • 1/2 tsp Cumin Seeds 
  • 2 pinch Asafoetida 
  • 1 Chopped Onion
  • Chopped Curry Leaves
  • Chopped Coriander
  • 3 tbsp Hot Oil 
  • Oil for frying

Instructions

  • To make Maddur Vada first of all take 1/2 cup of fresh peas.
  • Now into a Grinding jar add 1/2 cup of fresh peas, 5 – 6 garlic cloves, 2 green chilies, 1/2 inch of ginger, and blend coarsely.
  • Now take the mix out in a Bowl.
  • Now into Bowl add 1 cup of rice flour, 1/2 cup of gram flour, 1/2 cup of all-purpose flour.
  • Now add 1 tsp of red chili flakes, 1 tbsp of split Bengal dal, 1 tbsp of roasted peanuts, 1/2 tsp of cumin seeds, 2 pinches of asafoetida, and salt as per taste.
  •  Now add 1 chopped onion, 1 tbsp of chopped curry leaves, chopped coriander, and add 3 tbsp of Hot fortune groundnutt oil and mix everything well.
  •  Now add 2 tbsp of water prepare a semi-soft dough.
  • Now grease your hand and pinch lemon size dough and make a ball then turn it into vada like the following image.
  • Now follow the same process and prepare vada from all dough.
  • Now put a pan on gas and add oil for deep frying and heat on medium flame.
  • After oil becomes hot then add vada into oil and fry on low medium flame until they become golden.
  • Now take it out on a plate and fry all vada into Oil.
  • Now we will take a dip for our vada and for this post a pan on gas and add 1 tbsp of oil into it.
  • Now add 2 chopped onions and fry until they become golden.
  • Now add 4 dry red chilies and fry while it is golden.
  • Now add 2 chopped onions, salt as per taste, 2 tbsp of chana dal, and mix well and cook until soft.
  • Now turn off the gas and let the mix cook.
  • After the mix become cool then add it into the grinding jar and grind well.18 – Now take it out on a plate.
  • Now take a Tadka pan and add 1/2 tsp of oil and heat on medium flame.
  • After oil becomes hot then add 1/2 tsp of mustard seeds, 2 pinch of asafoetida, and some curry leaves.
  • Now add Tadka to the chutney.
  • Now your Crispy Maddur Vada and chutney is completely ready and you can enjoy them.

Maddur Vada – Recipe – Step By Step

1 – To make Maddur Vada first of all take 1/2 cup of fresh peas.

2 – Now into a Grinding jar add 1/2 cup of fresh peas, 5 – 6 garlic cloves, 2 green chilies, 1/2 inch of ginger, and blend coarsely.

3 – Now into Bowl add 1 cup of rice flour, 1/2 cup of gram flour, 1/2 cup of all-purpose flour.
4 – Now add 1 tsp of red chili flakes, 1 tbsp of split Bengal dal, 1 tbsp of roasted peanuts, 1/2 tsp of cumin seeds, 2 pinches of asafoetida, and salt as per taste.

5 – Now add 1 chopped onion, 1 tbsp of chopped curry leaves, chopped coriander, and add 3 tbsp of Hot fortune groundnutt oil and mix everything well.
6 – Now add 2 tbsp of water prepare a semi-soft dough.

7 – Now grease your hand and pinch lemon size dough and make a ball then turn it into vada like the following image.

8 – Now follow the same process and prepare vada from all dough.
9 – Now put a pan on gas and add oil for deep frying and heat on medium flame.
10 – After oil becomes hot then add vada into oil and fry on low medium flame until they become golden.

14 – Now add 4 dry red chilies and fry while it is golden.
15 – Now add 2 chopped onions, salt as per taste, 2 tbsp of chana dal, and mix well and cook until soft.

16 – Now turn off the gas and let the mix cook.
17 – After the mix become cool then add it into the grinding jar and grind well.
18 – Now take it out on a plate.

19 – Now take a Tadka pan and add 1/2 tsp of oil and heat on medium flame.
20 – After oil becomes hot then add 1/2 tsp of mustard seeds, 2 pinch of asafoetida, and some curry leaves.
21 – Now add Tadka to the chutney.

22 – Now your Crispy Maddur Vada and chutney are completely ready and you can enjoy them.
