Maddur Vada Recipe | How to make Maddur Vada at Home | Maddur Vade Recipe
Materials
- Green Peas – 1/2 cup
- Garlic – 6 cloves
- Green Chilies – 2
- Ginger – 1/2 inch
- Rice Flour – 1 cup
- Gram Flour – 1/2 cup
- All-Purpose Flour – 1/2 cup
- Red Chilli Flakes – 1 tsp
- Split Bengal Dal – 1 tbsp
- Roasted Peanuts – 1 tbsp
- Cumin Seeds – 1/2 tsp
- Asafoetida – 2 pinch
- Chopped Onion – 1
- Chopped Curry Leaves
- Chopped Coriander
- Hot Oil – 3 tbsp
- Oil for frying
Instructions
- To make the perfect Matar Maddur Vada, first take a grinding jar, add 1 cup of green peas to it.
- Now add six garlic cloves, two green chillies, 1/2 inch ginger, grind well and make a fine paste.
- Now transfer the mix to a bowl.
- Now into the bowl, add 1 cup of rice flour, 1/2 cup of gram flour, 1/2 cup of all-purpose flour.
- Now add 1 tsp of red chilli flakes, 1 tbsp of split Bengal Dal, 1 tbsp of roasted peanuts, 1/2 tsp of cumin seeds, two pinches of asafoetida, salt as per taste.
- Now add one chopped onion, chopped curry leaves, finely chopped coriander, 3 tbsp of hot fortune groundnut oil, and mix everything well.
- Now, little by little, add water as required and prepare a semi-soft dough.
- Now grease your hands and prepare a small Tikki shape, Vada.
- Now prepare Maddur Vada with the remaining Dough.
- Now, place a pan on flame, add oil for frying, and heat well.
- After the oil is hot, add prepared Maddur Vada and fry well.
- After some time, flip all Vada and fry well on both sides until golden & crisp.
- After Maddur Vada turns golden and crispy, transfer them to a plate and fry the next batch.
- Now your Perfect Matar Maddur Vada is ready, and you can enjoy it.
Instant Chutney Recipe
- To make Instant Chutney, first place a pan on flame, 1 tbsp of oil, and heat well.
- After the oil is hot, add two chopped onions, and roast well until it turns golden.
- After the onion turns a little golden, add four dry red chilies and roast.
- After onion turns golden, add two chopped tomatoes, salt as per taste, 2 tbsp of chana dal, and roast well until the mix turns soft.
- After tomatoes turn a little mushy, add 1 tbsp of tamarind pulp and mix well.
- After the mix turns soft, turn off the flame and let it cool.
- Now, take a grinding jar, add chutney mix to it and make a fine paste.
- To prepare the tempering, place a small pan on flame, add 1 tsp of oil, and heat well.
- After the oil is hot, add 1/2 tsp of mustard seeds, two pinch asafoetida, curry leaves.
- Now turn off the flame pour the tempering on the prepared chutney.
