What is Kulfi and its History?

Kulfi is like frozen yogurt in appearance and taste however denser and creamier. It comes in different flavors. The more conventional ones are cream (malai), rose, mango, cardamom (elaichi), saffron (kesar or zafran), and pistachio.

Kulfi or Qulfi is a Hindustani word got from the Persian Qufli (قفلی) signifying “covered cup”. The treat probably started in the Mughal Empire in the sixteenth century.

  • Finely chopped pistachio – 8-10

Materials

  • 1 cup Malai ( Milk Malai )
  • 1/2 cup Milk
  • Saffron strand pinch
  • 3-4 pods Cardamom Powder
  • 3 tbsp. Sugar powder 
  • 8-10 Finely chopped almonds 
  • 8-10 Finely chopped pistachio 

Instructions

  • To make Kulfi, first of all, take 1 cup of fresh milk cream.
  • Now take a jar and put milk cream in it and add 1 cup of little hot milk.
  • Now whisk the cream with the help of whiskers.
  • Now add saffron strands pinch to it.
  • Now add 3 – 4 pods of cardamom powder and take out the mixture in a bowl.
  • Now add 3 tbsp of sugar powder in it and mix everything well.
  • Now add 8 to 10 finely chopped almonds, 8 to 10 finely chopped pistachio, and mix well.
  • Now take mold or glass or paper cups or anything you have for setting kulfi.
  • Now fill pour kulfi mix into Moulds and cover Mould with plastic or butter paper.
  • Now place ice cream stick between of Mould.
  • Now Freeze it for 6 to 7 hours or overnight in the freezer.
  • Now it’s time to Demould the kulfi after 6 to 7 hours so now take a bowl and fill it with water.
  • Now dip Mould into the bowl for 1 minute.
  • After this keep it between hands and press to remove kulfi.
  • Now your Matka malai kulfi is ready and you can serve it and enjoy it

6 – Now add 3 tbsp of sugar powder in it and mix everything well.
7 – Now add 8 to 10 finely chopped almonds, 8 to 10 finely chopped pistachio, and mix well.

8 – Now take mold or glass or paper cups or anything you have for setting kulfi.

9 – Now fill pour kulfi mix into Moulds and cover Mould with plastic or butter paper.
10 – Now place ice cream stick between of Mould.
