Materials

  • 1/4 cup Ghee 
  • 1 cup Maida/All Purpose Flour 
  • 1 cup Sugar 
  • 3/4 cup Water 
  • 1/4 tsp Cardamom Powder
  • Saffron Strands
  • 2 tbsp Milk Powder 

Instructions

  • To make the confectionery style saffron barfi, first of all, you put a pan on the gas and add 1/4 cup ghee and flame to it.
  •  Once the ghee is hot, just add a cup of Maida to it and stir it well and roast it for 2 minutes.
  • Turn off the gas now and keep the pan aside.
  • Now stir another pan on the gas and add one cup sugar and 3/4 cup water in it and stir it well.
  • Now take a tray and apply some ghee on its surface to make it smooth.
  • When the sugar dissolves well, then add 1/4 tbsp. Cardamom powder, and add some saffron strands.
  •  now boil it until ½ string consistency.
  •  Now turn the gas off and add it to the roasted Maida and mix it well.
  •  Now put in 2 tbsp. Milk powder and mix it well.
  • Now add saffron milk (mix some saffron with milk) and mix it well.
  • Now when they start leaving the pan, turn off the gas.
  • Now take out the barfi mixture in the tray and set it well.
  • Now let it sat for 10 to 20 minutes.
  • Your barfi has jammed well and you can cut it now.
  • Now if you want to decorate it, you can use dry fruits.
