  • Cumin Seed – 1 tsp
  • Oil – 1 tbsp
  • Cumin Seeds – 1/2 tsp
  • Asafoetida – 1/4 tsp
  • Crushed Jaggery – 225 gm
  • Water – 4 tsp
  • Sugar – 150 gm
  • Black Salt – 1 tsp
  • Salt – 1 tsp
  • Ginger Powder – 1 tsp
  • Kashmiri Red Chili Powder – 2 tsp
  • Garam Masala – 1/2 tsp
  • Melon Seed – 2 tbsp

Materials

  • Imli/Tamarind – 400 gm
  • Fennel seeds – 1 tbsp
  • Black Peppercorns – 1 tsp
  • Cumin Seed – 1 tsp
  • Oil – 1 tbsp
  • Cumin Seeds – 1/2 tsp
  • Asafoetida – 1/4 tsp
  • Crushed Jaggery – 225 gm
  • Water – 4 tsp
  • Suger – 150 gm
  • Black Salt – 1 tsp
  • Salt – 1 tsp
  • Ginger Powder – 1 tsp
  • Kashmiri Red Chili Powder – 2 tsp
  • Garam Masala – 1/2 tsp
  • Melon Seed – 2 tbsp

Instructions

  • To make the perfect Imli Ki Chutney, take 400 grams of Imli/Tamarind(deseeded).
  • Next step – add hot water to tamarind and soak it for 1 hour.
  • After 1 hour, check the tamarind and mash it with your hands.
  • Next step – filter the tamarind paste with the help of a strainer.
  • Next step – place a pan on flame, add 1 tbsp of fennel seeds, 1 tsp of peppercorns, 1 tsp of cumin seeds, and roast everything for some seconds.
  • After roasting for some seconds, turn off the flame and let the Masala cool.
  • Next step – add cooled Masala into the grinding jar and make a coarse powder.
  • Next step – place a Kadhai on flame, add 1 tbsp of oil, and heat well.
  • After the oil is hot, add 1/2 tsp of cumin seeds and 1/4 tsp of asafoetida.
  • Next step – add 250 grams of crushed jaggery and 4 tbsp of water and melt on medium flame.
  • After the jaggery melts, add 150 grams of sugar and mix well.
  • After the sugar melts, add tamarind pulp, mix well, and cook on low flame.
  • After the chutney turns a little thick, add prepared Masala, 1 tsp of black salt, 1 tsp of salt, 1 tsp of ginger powder, 2 tsp of Kashmiri red chilli powder, and 1/2 tsp of Garam Masala, and mix well.
  • After the chutney turn thick, add 2 tbsp of roasted melon seeds, mix well, and turn off the flame.
  • Now your perfect Imli Ki Chutney is completely ready, and you can store it for six months in the fridge.
