Materials
- 1 cup Channa Dal/Split Pea
- 2 Dry Red Chilies
- 1 inch Cinnamon Stick
- 1 inch Ginger
- 2 Green chilies
- 6-7 cloves Garlic
- 1 tbsp. Cumin Seeds
- 1 tbsp. Fennel Seeds
- 10-12 Curry Leaves
- 1/4 tbsp. Asafoetida
- 1 Finely Chopped Onion
- Finely Chopped Coriander
- Salt as per taste
- 1 tbsp. Rice Flour
- 1 tbsp. Warm Cooking Oil
- Cooking Oil for Deep Fry
- 1 tbsp. Oil
- 2 Roughly Chopped Tomato
- 2 Dry Red Chilies
- Salt as per taste
- 2 tbsp. Channa Dal
- 1 tbsp. Tamarind Pulp
- 1 tbsp. Oil
- 1/2 tbsp. Mustard Seeds
- 2 pinch Asafoetida
- Curry Leaves
Instructions
- To make perfect Masala Vada, first take 1 cup of Chana Dal and soak it into the water for 3-4 hours.
- After 3-4 hours, check the chana dal, remove the excess water, and separate 2 tbsp of soaked Chana Dal in a bowl.
- Now take a grinding jar, add two dry red chillies, one cinnamon stick, 1 inch of ginger, two green chillies, 6-7 garlic cloves, 1 tsp of cumin seeds, 1 tsp of fennel seeds, 10-12 curry leaves, 1/4 tsp of asafoetida.
- Now grind everything well and make a coarse paste.
- Now add soaked Chana Dal into the grinding jar, grind well and make a coarse paste.
- Now transfer the mix to a bowl.
- Now into Masala Vada Mix, add one finely chopped onion, 2 tbsp of soaked Chana dal, finely chopped coriander, salt as per taste, 1 tbsp of rice flour.
- Now add 1 tsp of warm oil and mix everything gently.
- Now grease your hands and prepare a small Tikki shape, Vada, with the Mix.
- Now, one by one, prepare Masala Vada with the remaining Mix.
- Now, place a pan on flame, add oil for frying, and heat well.
- After the oil is hot, add prepared Masala Vada into Hot oil and fry well.
- After Masala Vada turns golden & crispy, transfer them to a plate and fry the next batch.
- To make Instant Chutney, first place a pan on flame, 1 tbsp of oil, and heat well.
- After the oil is hot, add two chopped onions, and roast well until it turns golden.
- After the onion turns a little golden, add four dry red chillies and roast.
- After onion turns golden, add two chopped tomatoes, salt as per taste, 2 tbsp of chana dal, and roast well until the Mix turns soft.
- After tomatoes turn a little mushy, add 1 tbsp of tamarind pulp and mix well.
- After the Mix turns soft, turn off the flame and let it cool.
- Now, take a grinding jar, add chutney mix to it and make a fine paste.
- To prepare tempering place, a small pan on flame, add 1 tsp of oil, and heat well.
- After the oil is hot, add 1/2 tsp of mustard seeds, two pinch asafoetida, curry leaves.
- Now turn off the flame pour the tempering on the prepared chutney.
- Now your perfect Masala Vada and Instant chutney are ready, and you can enjoy it.
