Materials
- Brinjal/eggplant -1/2 kg
- Gram flour – 1 tbsp
- Coriander Powder – 3 tbsp
- Cumin Powder – 1 tbsp
- Turmeric- 1 tbsp
- Kashmiri Red Chili Powder – 1 tbsp
- Red Chili Powder – 1 tbsp
- Dry Mango Powder – 1 tbsp
- Asafoetida – 1/2 tsp
- Aniseed (Fennel Seeds) – 1 tbsp
- Garam Masala – 1 tsp
- Kasoori Methi – 2 tbsp
- Mustard Oil – 2 tbsp
- Salt as per Taste
- Oil – 1 tbsp
For Masala Gravy
- Oil – 2 tbsp
- Cumin seeds – 1 tsp
- Mustard -1/2 tsp
- Chopped Green Chili – 3 to 4
- Chopped Onion – 2
- Grated Tomato – 2
- Salt as per Taste
- Curd – 5 tbsp
- Turmeric – 1/2 tsp
- Kashmiri Red Chili Powder – 1 tsp
- Coriander Powder -1 tsp
- Ginger And Garlic Paste – 1 tsp
- Water – 2 to 3 tbsp
Instructions
- To make the tastiest and most amazing Bharwa Baingan, take 1/2 kg of small Baingan/Eggplant and wash & dry them.
- Next step – cut all Baingan in X-shape(Not completely to the end) and keep them in water.
- Next step – place a pan on flame, add 1 tbsp of gram flour and roast a little on low flame.
- After 30 – 40 seconds, turn off the flame.
- Next step – into roasted gram flour, add 3 tbsp of coriander powder, 1 tbsp of cumin powder, 1 tbsp of turmeric powder, 1 tbsp of Kashmiri red chilli powder, 1 tbsp of red chilli powder, 1 tbsp of dry mango powder, 1/2 tsp of asafoetida, 1 tbsp of aniseed powder, 2 tbsp of Kasuri methi, and mix everything well.
- Next step – transfer the masala to a plate, add 2 tbsp of mustard oil, and mix well.
- Next step – add salt as per taste and mix well.
- Next step – one by one, fill the prepared masala into all baingan/Eggplant.
- Next step – place a pan on medium flame, add 1 tbsp of oil, and heat well.
- Next step – place stuffed Baingan into pan and roast well for 3 minutes.
- After three minutes, turn off the flame and transfer the Baingan to a plate.
- Next step – place a kadhai on flame, add 2 tbsp of oil, and heat well.
- After the oil is hot, add 1 tsp of cumin seeds, 1/2 tsp of mustard seeds, 3-4 chopped green chilli, and let everything crankle.
- After some seconds, add two chopped onions and roast well on medium-high flame until golden.
- After the onion turns golden, add two grated tomatoes, and salt as per taste and mix well, and roast.
- Next step – take a bowl, add 5 tbsp of curd, and whisk well.
- Next step – add 1/2 tsp of turmeric powder, 1 tsp of Kashmiri red chilli powder, 1 tsp of coriander powder, remaining stuffing masala, 1 tsp of ginger garlic paste and mix everything well.
- After the gravy leaves the oil, add 2-3 tbsp of oil and mix well.
- Next step – turn off the flame, add curd mixture and mix well.
- Next step – turn on the flame, add water if required, and mix well.
- Next step – add stuffed Baingan, close the lid and cook for 5 minutes.
- After 5 minutes, turn off the flame and garnish it with chopped coriander.
