  • Mustard Oil (Mustard Oil)-1 tbsp
  • Fenugreek Seeds (Methi)-1/4 tbsp
  • Coriander Seed –  1/2 tbsp
  • Fennel Seeds/Saunf – 1 tbsp
  •  Crushed Jaggery – 1 cups 
  • Kashmiri red chilli powder – 1 tsp 
  • Pepper powder – 1/2 tsp 
  • Turmeric powder – 1/2 tsp 
  • Coriander powder – 1 tsp 
  • Salt – 1/2 tsp 
  • Black salt – 1/2 tsp 
  • Roasted cumin powder – 1/2 tsp 
  • Garam Masala – 1/2 tsp

Materials

  • Amla/Gooseberry 8-10 pieces
  • Water -1 cup/glass
  • Mustard Oil (Mustard Oil)-1 tbsp
  • Fenugreek Seeds (Methi)-1/4 tbsp
  • Coriander Seed –  1/2 tbsp
  • Fennel Seeds/Saunf – 1 tbsp 
  • Crushed Jaggery – 1 cups 
  • Kashmiri red chilli powder – 1 tsp 
  • Pepper powder – 1/2 tsp 
  • Turmeric powder – 1/2 tsp 
  • Coriander powder – 1 tsp 
  • Salt – 1/2 tsp 
  • Black salt – 1/2 tsp 
  • Roasted cumin powder – 1/2 tsp 
  • Garam Masala – 1/2 tsp

Instructions

  •  To make Perfect Khatti Mithi Amla Ki Launji, first take 8-10 Amla/gooseberry.
  • Now place a cooker on flame, add one glass of water and 8-10 Amla to it.
  • Now, close the lid and cook for three whistles until Amla gets soft.
  • After three whistles, let the steam release completely, and after that, transfer the Amla to the plate.
  • Now, remove the seeds from all Amla.
  • Now mash the Amla well with the help of a masher.
  • Now place a pan on flame, add 1 tbsp of mustard oil, and heat well on low, medium flame.
  • After the oil is hot, turn the flame to low and add 1/4 tsp of Fenugreek seeds, 1/4 tsp of asafoetida. 1/2 tsp of kalonji, 1/2 tsp of coriander seeds, 1 tsp of fennel seeds, and mix & stir for 1-2 minutes.
  • After 1-2 minutes, add mashed Amla into the pan and mix well and fry on low, medium flame.
  • After 1 minute, add 1 cup of crushed Jaggery, mix well, and cook on low flame.
  • After Jaggery melts, add 1 tsp of Kashmiri red chilli powder, 1/2 tsp of pepper powder, 1/2 tsp of turmeric powder, 1 tsp of coriander powder, 1/2 tsp of salt, 1/2 tsp of black salt, 1 tsp of roasted cumin powder, 1/2 tsp of garam masala.
  • Now mix everything well on low flame and cook for 2 minutes.
  • After 2 minutes, turn off the flame and let it cool.
  • Now your Perfect Khatti Mithi Amla Ki Launji is completely ready, and you can enjoy it.
