  • Fennel Seeds – 2 tbsp
  • Fenugreek Seed – 1 tbsp
  • Mustard Oil – 1 cup
  • Mustard – 1 tsp
  • Cumin Seeds – 1 tsp
  • Chopped Garlic – 2 tbsp
  • Dried Red Chili – 10 to 12
  • Kashmiri Red Chili Powder – 2 tbsp
  • Nigella Seeds – 1 tsp
  • Carom Seed/Ajwain 
  • White Vinegar

Materials

  • Raw mango – 1 kg
  • Turmeric Powder – 1 tbsp
  • Salt – 3 tbsp
  • Mustard – 2 tbsp
  • Cumin Seeds – 1 tbsp
  • Fennel Seeds – 2 tbsp
  • Fenugreek Seed – 1 tbsp
  • Mustard Oil – 1 cup
  • Mustard – 1 tsp
  • Cumin Seeds – 1 tsp
  • Chopped Garlic – 2 tbsp
  • Dried Red Chili – 10 to 12
  • Kashmiri Red Chili Powder – 2 tbsp
  • Nigella Seeds – 1 tsp
  • Carom Seed/Ajwain 
  • White Vinegar 

Instructions

  • To make the perfect Aam Ka Achar, take 1 kg of raw mangoes and wash & wipe them well.
  • Next step – cut the mangoes into small pieces.
  • Next step – add 1 tbsp of turmeric powder, 3 tbsp of salt and mix well.
  • Next step – place a pan on flame, add 2 tbsp of mustard seeds, 1 tbsp of cumin seeds, 2 tbsp of fennel seeds, 1 tbsp of fenugreek seeds, 1 tsp of asafoetida, and roast well for a minute.
  • After roasting for a minute, turn off the flame and let everything cool down.
  • Next step – add masala mix into a grinding jar and make a fine powder.
  • Next step – place the pan on flame, add 1 cup of mustard oil, and heat well.
  • After the oil is hot, turn off the flame and let it cool for some time.
  • After the oil temperature comes a little down, add 1 tsp of mustard seeds, 1 tsp of cumin seeds, 2 tbsp of chopped garlic, 10-12 chopped red chillies, and mix well (make sure to keep the flame off).
  • Next step – check the mangoes, add 2 tbsp of red chilli powder, 1 tsp of nigella seeds, 1 tsp of carom seeds, and prepared achar masala.
  • Next step – add prepared mustard oil and mix everything well.
  • Next step – add white vinegar, mix well, and let it rest for 4-5 hours.
  • To store the Achar, take a glass jar, wash and wipe it well.
  • Next step – place burned coal on a plate and sprinkle asafoetida on it.
  • Next step – place the jar above the smoke charcoal.16 – Next step – store your Aam Ka Achar in a glass jar.
