Materials
- Poha – 2 cup
- Boiled Potato – 3
- Salt as per Taste
- Red Chili Powder -1 tsp
- Chaat Masala – 1 tsp
- Garam Masala – 1/2 tsp
- Chopped Capsicum – 4 to 5 tbsp
- Chopped Carrot – 4 to 5 tbsp
- Chopped Onion – 1
- Green Peas
- Chopped Green
- Chili Ginger – 1 tbsp
- Corn flour – 3 tbsp
- Chopped Coriander
- All-purpose flour – 2 tbsp
- Corn flour – 2 tbsp
- Water
- Salt as per Taste
- Bread Crumb
Green Chutney Recipe
- Coriander – 1 Cup
- Cup Mint Leaves – 1/4 Cup
- Chopped Green Chili – 4
- Garlic
- Salt as per Taste
- Black Salt – 1/4 tsp
- Asafoetida/Hing – 2 pinch
- Cumin Seed/Jeera – 1/4 tsp
- Peanut – 1 tbsp
- Lemon Juice
- Water – 2 tbsp
Instructions
- To make the perfect Poha cutlet, take 2 cups of Poha and wash it well.
- After washing, soak the Poha in water for 3 minutes.
- After 3 minutes, drain the excess water and leave it for 1-2 minutes.
- Take a bowl, add three boiled and cooled potatoes, and mash well with the help of a masher.
- Add soaked Poha, salt as per taste, 1 tsp of red chili powder, 1 tsp of chaat masala, and 1/2 tsp of garam masala.
- Add 4-5 tbsp of chopped capsicum, 4-5 tbsp of chopped carrot, one chopped onion, chopped green chilies, and one tsp of grated ginger, and mix everything well.
- Add boiled green peas, 3–4 tablespoons of corn flour (optional; you can use rice flour, all-purpose flour, gram flour, or arrowroot flour), chopped coriander, and mix everything well.
- Now, one by one, prepare small patties with cutlet mix.
- Take a bowl, add two tablespoons of all-purpose flour, two tablespoons of corn flour, salt, and a little water, and prepare a slurry.
- One by one, dip the prepared cutlets into the slurry and coat them with bread crumbs.
- Now, keep the entire Poha cutlet in the freezer for 10–15 minutes.
- After 10–15 minutes, take out the cutlets from the freezer.
- Place a pan on a flame, add oil for frying, and heat well.
- Once the oil is hot, add the prepared cutlet and fry well until golden and crispy.
- After the Poha cutlets turn golden and crispy, transfer them to a plate and fry the next batch.

- To make the perfect green chutney, take a grinding jar and add 1 cup of fresh coriander and 1/4 cup of mint leaves.
- Add 3–4 green chilies, four garlic cloves, salt as per taste, 1/4 tsp of black salt, two pinches of asafoetida, and 1/4 tsp of cumin seeds.
- Now add one tablespoon of peanuts, one tablespoon of lemon juice, and two tablespoons of water, and make a fine paste.
- Now your perfect Poha cutlet and green chutney are completely ready, and you can enjoy them.
