Materials
For Batter
- Gram flour – 2 cups
- Rice flour – 2 tbsp
- Red chilli powder – 1 tsp
- Salt per taste
- Turmeric powder – 2 pinch
- Baking soda – 1/4 tsp
- Hot oil – 1 tbsp
For Stuffing
- Boiled Potato – 5
- Green chillies – 3-4
- Garlic cloves – 7-8
- Ginger – 1 inch
- Water – 1 tbsp
- Oil – 1 tbsp
- Mustard seeds – 1 tsp
- Cumin seeds – 1/2 tsp
- Asafoetida – 2 pinch
- Turmeric powder – 1/4 tsp
- Salt per taste
- Chopped coriander
For Red Chutney
- Oil for frying
- Prepared Gram flour batter
- Green chillies – 7-8
- Fried Garlic cloves – 10-12
- Gram flour chura – 4 tbsp
- Kashmiri red chilli powder – 4 tbsp
- Salt per taste
- Fried peanuts – 2 tsp
For Green Chutney
- Coriander leaves
- Green chillies – 4-5
- Ginger – 1 inch
- Garlic cloves – 4-5
- Salt per taste
- Lemon juice
For Vada Pav Assembling
- Pav
- Green chutney
- Red chutney
- Fried chilli
Instructions
- To make the amazing Vada Pav, take a bowl, add 2 cups of gram flour, 2 tbsp of rice flour, 1 tsp of red chilli powder, salt per taste, two pinch turmeric powder, and mix everything well.
- Next step – add water in batches and prepare a medium-thick batter.
- Next step – add 1/4 tsp of baking soda, 1 tbsp of hot oil and whisk well for 2 minutes.
- Next step – keep the batter aside and let it rest for 10 minutes.
- Next step – take five boiled & cooled potatoes and mash them well.
- Next step – take a grinding jar, add 3-4 green chillies, 7-8 garlic cloves, one inch of ginger, coriander stems, 1 tbsp of water, and make a fine paste.
- Next step – place a pan on flame, add 1 tbsp of oil, and heat well.
- After the oil is hot, add 1 tsp of mustard seeds, 1/2 tsp of cumin seeds, 2 pinch of asafoetida, curry leaves, prepared paste, and cook on medium flame.
- Next step – add 1/4 tsp of turmeric powder, mashed potato, salt per taste, and everything well.
- Next step – add chopped coriander, mix well, turn off the flame, and let it cool.
- Next step – place a pan on flame, add oil for frying and heat well.
- Next step – dip your fingers into the prepared batter and rotate your hand on hot oil like the following image.
- After the Besan Chura turns golden and crispy, turn off the flame and transfer it to a plate.
- Next step – add -7-8 green chillies into hot oil and fry well.
- After frying, transfer the green chillies to a plate and coat them with salt.
- Next step – take a grinding jar, add 10-12 fried garlic cloves(with skin), 4 tbsp of prepared Besan chura, 4 tbsp of Kashmiri red chilli powder, salt per taste, and 2 tsp of fried peanuts.
- Next step – grind well, make coarse red powder and your Vada Pav red chutney is ready.
- Next step – take a grinding jar, add coriander leaves, 4-5 green chillies, 1 inch of ginger, 4-5 garlic cloves, salt per taste, and lemon juice.
- Next step – add little water and prepare a thick chutney.
- Next step – check potato stuffing and prepare small flatten balls.
- Next step – one by one dip prepared balls into the batter, add into hot oil and fry well until golden.
- After the Vada turns golden, transfer them to a plate and fry the next batch.
- To assemble the Vada pav, take a pav and cut it into halves but don’t cut it till the end.
- Next step – add green chutney, sprinkle red chutney, place the prepared Vada & fried green chilli, and close the pav.
- Now your perfect Vada Pav is completely ready, and you can enjoy it.

Vada Pav Recipe – Step By Step

15 – After frying, transfer the green chillies to a plate and coat them with salt.
16 – Next step – take a grinding jar, add 10-12 fried garlic cloves(with skin), 4 tbsp of prepared Besan chura, 4 tbsp of Kashmiri red chilli powder, salt per taste, and 2 tsp of fried peanuts.
17 – Next step – grind well, make coarse red powder and your Vada Pav red chutney is ready.
18 – Next step – take a grinding jar, add coriander leaves, 4-5 green chillies, 1 inch of ginger, 4-5 garlic cloves, salt per taste, and lemon juice.
19 – Next step – add little water and prepare a thick chutney.
20 – Next step – check potato stuffing and prepare small flatten balls.
21 – Next step – one by one dip prepared balls into the batter, add into hot oil and fry well until golden.
22 – After the Vada turns golden, transfer them to a plate and fry the next batch.
23 – To assemble the Vada pav, take a pav and cut it into halves but don’t cut it till the end.
24 – Next step – add green chutney, sprinkle red chutney, place the prepared Vada & fried green chilli, and close the pav.
