Materials
- Ridge Gourd – 500 gm
- Oil – 2 tbsp
- Cumin Seed – 1 tsp
- Mustard – 1/2 tsp
- Asafoetida – 2 pinch
- Curry Leaves
- Chopped Onion – 2
- Chopped Tomato – 3
- Ginger – 1 inch
- Green Chilli – 2
- Coriander
- Gram flour – 1 tbsp
- Kashmiri Red Chili Powder – 2 tsp
- Coriander Powder – 1 tsp
- Cumin Powder
- Water
- Garlic – 1 tbsp
- Turmeric Powder – 1/2 tsp
- Kashmiri Red Chili Powder – 1/2 tsp
- Salt
- Garam Masala – 1/2 tsp
- Kasoori Methi – 1 tsp
- Pure Ghee – 1 tsp
- Chopped Coriander
Instructions
- To make the perfect Masaledar Turai Ki Sabji, take 500 grams of Turai, wash them well, and peel them.
- Now cut the Turai into small pieces.
- Now place a pan on the flame, add 2 tablespoons of oil, and heat well.
- After the oil is hot, add 1 tsp of cumin seeds, 1/2 tsp of mustard seeds, 2 pinches of asafoetida, curry leaves and roast a little.
- After a few seconds, add two chopped onions and roast well until golden.
- Now take a grinding jar, add three chopped tomatoes, coriander leaves, 1 tbsp of gram flour, 2 tsp of red chili powder, 1 tbsp of coriander powder, and 1 tsp of cumin powder, and make a fine paste.
- After the onion turns golden, add 1 tbsp. of grated garlic, 1/2 tsp. of turmeric powder, and 1/2 tsp. of Kashmiri red chili powder and roast well.
- After roasting well, add the prepared paste and a little water, and cook well on medium heat.
- After the gravy releases the oil, add chopped turai and cook for 3–4 minutes.
- After 3–4 minutes, add salt as per taste and cook for 7-8 minutes with a closed lid.
- After 8–10 minutes, remove the lid, add 1/2 tsp of garam masala, 1 tsp of Kasoori methi, and 1 tsp of ghee, and mix well.
- Turn off the flame and garnish it with chopped coriander and red chili.
- Now your perfect Masaledar Turai Ki Sabji is completely ready, and you can enjoy it.
