Materials

  • Sesame Seeds – 1 cup 150 gm
  • Peanut – 1 cup 75 gm
  • Murmura/ Puffed Rice – 1 cup 10 gm
  • Ghee – 1 tbsp
  • Jaggery – 1 cup 250 gm

Instructions

  • To make the delicious Til Ki Barfi, begin by placing a kadhai on low flame. Add 150 grams of sesame seeds and roast them for 2-3 minutes until aromatic, stirring continuously to avoid burning. Transfer the roasted sesame seeds to a plate and set aside to cool.
  • Next, add 75 grams of peanuts to the same kadhai and roast them gently until they develop a light golden color. Stir occasionally to ensure even roasting. Once roasted, transfer the peanuts to a plate and let them cool. Peel off the skin by rubbing them between your hands or using a clean kitchen towel.
  • Add 1 cup of murmura (puffed rice) to the kadhai and roast it lightly until it turns crisp. This step enhances the flavor and texture of the murmura. Once done, transfer it to a plate and set it aside.
  • In a grinding jar, add the roasted sesame seeds and grind them into a coarse powder. Transfer the sesame seed powder to a large mixing plate or bowl.
  • Add the roasted peanuts and murmura to the grinding jar and grind them into a coarse powder as well. Transfer this mixture to the same plate with the sesame seed powder and mix everything together evenly.
  • Place the kadhai back on medium flame and add 1 tablespoon of ghee. Once the ghee melts, add 1 cup of crushed jaggery along with 2 tablespoons of water. Stir continuously to melt the jaggery completely and create a smooth syrup.
  • To check if the syrup is ready, drop a small amount into a bowl of cold water. If the syrup hardens and forms a firm ball, it’s perfect for binding the barfi.
  • Lower the flame and quickly add the sesame, peanut, and murmura mixture to the melted jaggery. Mix thoroughly to ensure all the ingredients are coated evenly with the syrup. Cook the mixture for a minute or two until it starts leaving the sides of the pan.
  • Turn off the flame and transfer the mixture to a greased plate or tray. Spread it out evenly using a spatula or the back of a spoon to create an even layer.
  • Garnish the spread mixture with additional sesame seeds and crushed peanuts, pressing them lightly to stick to the surface.
  • Allow the barfi to set for about 20 minutes at room temperature. Once it has hardened, use a sharp knife to cut it into small square or diamond-shaped pieces.
