Materials
- Ghee – 4 tbsp
- Semolina/Suji – 1 cup
- Desiccated coconut – 2 tbsp
- Milk Cream – 4 tbsp
- Milk – 4 tbsp
- Sugar Powder – 1 cup
- Cardamom powder – 1/4 tsp
- Saffron strands Almonds – 1 tbsp
- Cashew – 1 tbsp
- Pistachio – 1 tbsp
- Desiccated coconut – 2 tbsp
- Grated Jaggery – 2 tbsp
Instructions
- To make the perfect Suji Malai Modak, place a kadhai on flame, add 4 tbsp of ghee, and melt.
- Next step – add 1 cup of fine suji/Semolina, and roast a little on low to medium flame.
- After 3-4 minutes, add 2 tbsp of desiccated coconut and roast a little.
- Next step – add 4 tbsp of Milk Cream(Malai) & 4 tbsp Milk, mix well and cook on low to medium flame.
- Next step – add 1 cup of sugar powder and mix well on low flame.
- Next step – add 1/4 tsp of cardamom powder and mix well.
- Next step – add a pinch of saffron strands and mix well.
- After mixing well, turn off the flame and transfer the mixture to a plate.
- To make the stuffing, take a grinding jar, and add 1 tbsp of almonds, 1 tbsp of cashew, 1 tbsp of pistachio, and 2 tbsp of desiccated coconut.
- Next step – grind everything well and make a coarse powder.
- Next step – add 2 tbsp of grated jaggery, grind on the pulse and make a coarse paste.
- Next step – prepare small balls with the stuffing mixture.
- Next step – take a Modak mould and grease it with ghee.
- Next step – take small portion of Modak Mixture, fill it into Modak mould and keep some space for stuffing.
- Next step – fill the stuffing ball into the mould and cover it with Modak Mixture.
- Next step – open the Modak Mould, transfer the Modak to a Plate and garnish with pistachio & saffron strands.
- To make Modak without Modak mould, take a small portion of Modak mixture and flatten it like the following image.
- Next step – place a Modak Stuffing on it and close it from all sides.
- Next step – gently give the Modak Shape and make a design on it using a fork.
