- 5 tbsp Coriander seeds
- 3 tbsp Jeera/cumin
- 1 tbsp Saunf/fennel
- 15 Dry red chilli
- 1 tbsp Black Peppercorn
- 2 Bay leaf
- 2 Cinnamon sticks
- 1 Black cardamom
- 10 Cloves
- 1 tbsp Dry mango powder
- 1 tsp Turmeric powder
- 1 tsp Salt
- 1 tsp Black salt
Instructions
- To make Pav Bhaji Masala, first place a pan on flame and heat.
- Now add 5 tbsp of Coriander seeds, 3 tbsp of cumin seeds, 1 tbsp of fennel, and dry roast everything low flame until aromatic.
- After the mix turns aromatic, transfer everything on a plate.
- Now again, place the pan on low flame.
- Now add 15 red chillies, 1 tbsp of black peppercorn, two bay leaves, two cinnamon sticks, one black cardamom, ten cloves, and dry roast everything.
- Now transfer everything on a plate and let everything cool.
- Now, take a grinding jar, add all roasted masala, and add 1 tbsp of dry mango powder, 1 tsp of turmeric powder, and 1 tsp of black salt.
- Now grind everything well and prepare a fine powder.
- Now, transfer it into a jar, and you can store it for six months in the fridge.
- You can also use this Pav Bhaji masala for Tawa pulao, Masala Pav, Paneer Masala, Pav Bhaji Toast, and many more.
