Materials
- Gram flour – 1 Cup
- Red Chili Powder – 1/2 tsp
- Salt as per Taste
- Turmeric Powder – 1/4 tsp
- Water 2 glass
- Green Chutney – 1 tbsp
- Tamarind Pulp- 1/2 cup
- Salt as per Taste – 1/2 tsp
- Black Salt – 1/2 tsp
- Cumin Powder – 1/2 tsp
- Chaat Masala – 1/2 tsp
- Asafoetida/Hing – 2 pinch
- Red Chili Flakes – 1/2 tsp
- Red Chili Powder
- Mint Leaves/Pudina
- Chopped Coriander
- Sugar – 1/2 tsp
- Oil to fry
Instructions
- o make Chatpate Pani Pakode, take a bowl and add 1 cup of gram flour to it.
- Now add 1/2 tsp of red chilli powder, salt as per taste, 1/4 tsp of turmeric powder, and mix well.
- Now, little by little, add water, whisk well for 5 minutes in one direction and prepare a medium thick batter.
- Now, take a small portion of batter and add it into the water; if batter floats on water, this means batter is perfect for making the Phulki; otherwise, whisk a little more.
- Now cover the batter and let it rest for 10 minutes.
- Now, take a bowl and add 2 glasses of water.
- Now add 1 tbsp of green chutney, 1/2 cup of tamarind water and mix well.
- Now add 1/2 tsp of salt, 1/2 tsp of black salt, 1/2 tsp of roasted cumin powder, 1/2 tsp of chaat masala, and mix everything well.
- Now 2 pinch asafoetida, add 1/2 tsp of red chilli powder, finely chopped mint leaves, chopped coriander leaves, 1 tbsp of lemon juice and mix well.
- Now add 1/2 tsp of sugar, mix well, and your Chatpata Pani is ready.
- Now check your batter and whisk well again for 1 minute.
- Now, place a pan on flame, add oil for frying and heat well.
- Now, one by one, take a small portion of batter, drop them into oil and fry well.
- After Phulki starts floating, flip them with the spoon and fry.
- After your Phulki turns golden, transfer them to a plate and fry the next batch.
- Now, take normal water in a bowl and add prepared Phulki.
- After 30-40 seconds, squeeze the water from all Phulki and transfer them into prepared Phulki Water.
- Now, you can serve your Chatpate Pani Phulki and enjoy it.
