Materials
- Bitter Gourd – 500 gm
- Salt – 1 tsp
- Turmeric Powder – 1/2 tsp
- Lemon juice
- Mustard Oil – 4 tbsp
- Cumin Seed – 1/2 tsp
- Nigella Seeds – 1/4 tsp
- Fennel Seeds – 1/2 tsp
- Asafoetida – 2 pinch
- Chopped Onion – 3
- Chopped Green Chili – 2
- Ginger And Garlic Paste – 1 tsp
- Kashmiri Red Chili Powder – 1 tsp
- Coriander Powder – 2 tsp
- Cumin Powder – 1/2 tsp
- Garam Masala – 1/2 tsp
- Fennel Seeds Powder – 1 tsp
- Salt as per Taste
- Turmeric Powder – 1/2 tsp
- Dry Mango Powder – 1 tsp
- Kasoori Methi
- Chopped Coriander
Instructions
- To make the perfect Pyaj Karela Ki Sabji, take 500 grams of bitter gourd and wash them well.
- Next step – cut the Karela into medium-thick slices(you don’t need to peel the karela).
- Next step – add 1 tsp of salt, 1/2 tsp of turmeric powder, lemon juice and mix well with karela.
- Next step – cover the lid and let the karela rest for 15 minutes.
- After 15 minutes, squeeze and remove the excess water from the karela.
- Next step – place a kadhai on flame, add 4 tbsp of mustard oil, and heat well.
- After the oil is hot, turn off the flame and let the temperature a little down.
- Next step – turn on the flame, add prepared karela, and fry well.
- After 4-5 minutes, turn off the flame and transfer the roasted karela to a plate.
- Next step – in the remaining oil, add 1/2 tsp of cumin seeds, 1/4 tsp of nigella seeds, 1/2 tsp of fennel seeds, 1/4 tsp of fennel seeds, two pinch of asafoetida and saute a little.
- Next step – add three chopped onions, two chopped green chilli, 1 tsp of ginger garlic paste, and roast well.
- After the onion turns pink, add roasted karela and mix well.
- Next step – add 1 tsp of Kashmiri red chilli powder, 2 tsp of coriander powder, 1/2 tsp of cumin powder, 1/2 tsp of garam masala, 1 tsp of fennel seeds powder, salt per taste, turmeric powder, and mix everything well.
- Next step – close the lid and cook for 3-4 minutes on low flame.
- After 3-4 minutes, add 1 tsp of dry mango powder, kasoori methi, chopped coriander, and mix well.
