Materials
For Caramel Crunch
- Sugar – 1/2 cup (6 tbsp)
- Butter – 1 tsp
- Almonds – 4 tbsp
- Cashew nut – 4 tbsp
For Caramel Syrup & Pastry
- Sugar – 3/4 cup
- Butter – 2 tbsp
- Fresh Cream – 3 tbsp
- Whipped Cream – 1 cup
- Rusk/Toast – 9 to 12 piece
- Milk – 4 tbsp
Instructions
- To make the perfect No Bake Butterscotch Pastry, place a pan on flame, add 1/2 cup of sugar and let it melt on medium flame.
- After the sugar melts, add 1 tsp of butter and mix well.
- Next step – add 4 tbsp of chopped almonds & cashew and mix well.
- After 30 seconds turn off the flame, transfer the caramel mix to a greased plate and let it set for 3-4 minutes.
- Next step – place the pan on flame, add 3/4 cup of sugar, melt on medium flame.
- After the sugar melts, add 2 tbsp of butter and mix well.
- After mixing well, add 3-4 tbsp of fresh cream(at room temperature), mix well and stir continuously.
- Next step – turn off the flame and transfer the caramel syrup into a bowl.
- Next step – check your caramel crunch and break it into small pieces like the following image.
- Next step – take 1 cup of whip cream and whisk well with the help of an electric beater or hand whisker.
- Next step – add 2 tbsp of caramel sauce and whisk well one more time.
- Next step – add 4 tbsp of milk into prepared caramel sauce and mix well.
- Next step – one by one, dip the rusk into prepared caramel milk and make a layer of three rusks.
