Materials
- All purpose flour – 4 cup
- Clarified Butter – 1/2 cup
- Water
- Chopped Almonds – 2 tbsp
- Chopped Cashew nut – 2 tbsp
- Chopped Pistachio – 2 tbsp
- Desiccated Coconut – 1/2 cup
- Golden Raisins – 1 tbsp
- Clarified Butter – 1 tbsp
- Semolina – 1/2 cup
- Mawa – 400 gms
- Cardamom Powder – 1/2 tsp
- Saffron Strands
- Sugar powder – 1 cup
- Clarified Butter
Instructions
- To make the perfect Suji Mawa Gujiya, take a wide plate, add 4 cups of all-purpose flour, and 1/2 cup of ghee, and mix well.
- Little by little, add water and hard dough.
- Now cover the dough and let it rest for some time.
- Place a pan on the flame, grease it with ghee, and heat well.
- Now add two tablespoons of chopped almonds and two tablespoons of chopped cashew, and roast on low heat.
- After a minute, add 1/2 cup of desiccated coconut and one tablespoon of raisins, and roast everything well.
- After roasting well, turn off the flame and transfer the stuffing to a bowl.
- Now add one tablespoon of ghee to the pan and heat well.
- After the ghee is hot, add 1/2 cup of semolina and roast well until golden.
- After the semolina turns golden, transfer it to the bowl.
- Now add 400 grams of crushed Mawa to the pan and roast a little.
- After roasting well, turn off the flame and let it cool.
- Into the same bowl, add Mawa, 1/2 tsp of cardamom powder, saffron strands, and one cup of sugar powder, and mix everything well.
- Now check the dough, take a small portion, knead one more time, and prepare the small balls.
- Take a ball and roll it with the help of a roller pin.
- Now place the rolled puri on the Gujiya mould, apply water to the edges, and add one tablespoon of stuffing.
- Now close the Gujiya mold and prepare the Gujiya.
- Now prepare the Gujiya with the remaining dough.
- Now place a pan on a flame, add oil for frying, and heat well.
- After the oil is hot, add the prepared gujiya and fry well until golden and crispy.
- After the gujiya turns golden and crispy, transfer it to a plate and fry the next batch.
- Now your perfect Mawa Gujiya is completely ready, and you can enjoy it.
