Ingredients of Matar Veg Puff Patties Recipe

For Dough 

  • Wheat flour – 2 cup
  • Salt as per Taste 
  • Carom Seed – 1/4 tsp
  • Oil – 3 tbsp
  • Water

For Stuffing 

  • Green Peas – 1.25 Cup
  • Potatoe – 1
  • Oil – 1 tbsp
  • Cumin Seed – 1/2 tsp
  • Chopped Chilli -2, Ginger – 1, Garlic – 6 to7
  • Water – 1 to 2 tbsp
  • Coriander Powder – 1 tsp
  • Red chilly powder – 1/2 tsp
  • Turmeric Powder – 1/4 tsp
  • Cumin Powder – 1/2 tsp
  • Garam Masala – 1/2 tsp
  • Chaat Masala – 1/2 tsp
  • Coriander Leaves/Hara Dhania

For Paste 

  • Corn flour – 2 tbsp
  • Clarified Butter/Ghee – 3 tbsp

Materials

For Dough 

  • Wheat flour – 2 cup
  • Salt as per Taste 
  • Carom Seed – 1/4 tsp
  • Oil – 3 tbsp
  • Water

For Stuffing 

  • Green Peas – 1.25 Cup
  • Potatoe – 1
  • Oil – 1 tbsp
  • Cumin Seed – 1/2 tsp
  • Chopped Chilli -2, Ginger – 1, Garlic – 6 to7
  • Water – 1 to 2 tbsp
  • Coriander Powder – 1 tsp
  • Red chilly powder – 1/2 tsp
  • Turmeric Powder – 1/4 tsp
  • Cumin Powder – 1/2 tsp
  • Garam Masala – 1/2 tsp
  • Chaat Masala – 1/2 tsp
  • Coriander Leaves/Hara Dhania

For Paste 

  • Corn flour – 2 tbsp
  • Clarified Butter/Ghee – 3 tbsp

Instructions

  • To make Matar Veg Puff Patties, first take a wide bowl and add 1 cup of all-purpose flour, 1 cup of wheat flour.
  • Now add salt as per taste, 1 tsp of carom seeds, 4 tbsp of oil as required, and mix well with your hands.
  • Now, make a shape with dough; if it holds shape, this means oil quantity is perfect.
  • Now, little by little, add water and make a semi-soft dough.
  • Now, cover the dough with a wet cloth and let it rest for 10 minutes.
  • Now, take a grinding jar and add 1.25 cups of green peas, one chopped potato, grind it on the pulse, and make a coarse mix.
  • Now place a Kadhai on flame, add 1 tbsp of oil, and heat well on medium flame.
  • After the oil is hot, add 1/2 tsp of cumin seeds, one finely chopped onion, and saute on medium flame until it turns a little golden.
  • Now add two chopped chilies, two chopped ginger, 6-7 chopped garlic, and saute well.
  • After the onion is roasted well, add green peas mixture into pan and mix well and roast for 1 minute.
  • After one minute, add 1 -2 tbsp of water, mix well, close the lid and cook for 3-4 minutes.
  • After 3-4 minutes, remove the lid and add 1 tsp of coriander powder, 1/2 tsp of red chilli powder, 1/4 tsp of turmeric powder, 1/2 tsp of cumin powder, 1/2 tsp of garam masala, salt as per taste, 1/2 tsp of chaat masala and mix everything well.
  • Now add finely chopped coriander and mix well.
  • Now turn off the flame and let the stuffing cool.
  • Now, take a small bowl and add 2 tbsp of cornflour, 3 tbsp of ghee, mix well, and make a paste.
  • Now check the dough, add some oil drops on it, and knead well one more time.
  • Now, make a log with dough and cut it into seven small pieces.
  • Now, take one piece of dough and roll it thin like a roti.
  • Now, roll all remaining pieces of dough like a roti one by one.
  • Now take the Roties one by one and apply cornflour paste on it, place the second roti on it, apply cornflour paste on it, then place the third roti on it, and make the layer of the seven Rotis in the same way.
  • Roll the roti tightly in one direction and make a lof with it.
  • Now, gently cut the log into small pieces.
  • Now, take one portion of dough and roll it like a roti.
  • Now, cut the roti into a square piece.
  • Now add one tbsp of filling on the squire roti and apply water on its edges.
  • Now fold it into half and make a tringle.
  • Now, prepare tringle puff with remaining dough and stuffing one by one.
  • Now, place a pan on flame and add oil for frying and heat well.
  • Now add prepared Matar puff into hot oil and fry well on low-medium flame.
  • After the puff turns crispy and crunchy, transfer it to a plate and fry the next batch.
