  • Wheat Flour – 3/4 cup 
  • Semolina – 1/4 cup 
  • Cardamom Powder – 1/2 tsp 
  • Fennel Powder – 1/4 tsp 
  • Warm Milk – 1.75 cup 
  • Milk Malai – 2 tbsp 
  • Sugar – 1 cup 
  • Water – 1 cup 
  • saffron strands

Materials

  • Wheat Flour – 3/4 cup 
  • Semolina – 1/4 cup 
  • Cardamom Powder – 1/2 tsp 
  • Fennel Powder – 1/4 tsp 
  • Warm Milk – 1.75 cup 
  • Milk Malai – 2 tbsp 
  • Sugar – 1 cup 
  • Water – 1 cup 
  • saffron strands
  • Cardamom Powder – 1/4 tsp
  • Ghee/Oil for for frying 

Instructions

  • To make the perfect Malpua, first take a bowl and add 3/4 cup of wheat flour to it.
  • Now add 1/4 cup of semolina, 1/2 tsp of cardamom powder, 1/4 tsp of fennel powder, and mix everything well.
  • Now, little by little, add warm milk(as required & I have used 1.75 cup milk), mix well, and prepare a medium consistency batter.
  • Now 2 tbsp of milk malai and mix well.
  • Now cover the batter and let it rest for 15 minutes.
  • Now place a pan on flame, add 1 cup of sugar, 1 cup of water, and melt on medium flame.
  • Now add one pinch of saffron strands, 1/4 tsp of cardamom powder and mix well and melt.
  • After sugar melts, turn the flame to low and cook for 2-3 minutes.
  • After sugar syrup turns sticky, turn off the flame and keep the pan aside.
  • Now, place a wide pan on flame and add ghee/oil for frying and heat well.
  • After 15 minutes, check the batter, and if your batter turns thick, then add little more milk to adjust the consistency.
  • Now, set a spoon or ladle to pour the Malpua into ghee.
  • Now, take one ladle of the whole batter and pour it into hot ghee and fry well.
  • After Malpua turns golden, flip the Malpua and fry well on both sides.
  • After Malpua turns golden and crispy, transfer the Malpua( make sure you squeeze the oil from Malpua before dropping it into syrup) to the warm sugar syrup and dip for 3-4 minutes.
  • One by one, prepare Malpua from the remaining batter.
  • After 3-4 minutes, take out Malpua from the syrup.
  • Now your Perfect Malpua is ready, and you can enjoy them.
