  • Milk – 1 Cup
  • Cashew nut – 1/2 Cup
  • Dry Coconut Powder -1/2 Cup
  • Sugar – 6 tbsp
  • Cardamom Powder – 1/2 tsp
  • Green food color

Materials

  • Ghee – 2 tbsp
  • Milk – 1 Cup
  • Cashew nut – 1/2 Cup
  • Dry Coconut Powder -1/2 Cup
  • Sugar – 6 tbsp
  • Cardamom Powder – 1/2 tsp
  • Green food color

Instructions

  • To make the Perfect Lauki Ki Barfi, take 3 Lauki/Bottle Gourd.
  • Now wash and peel the bottle gourd and cut both ends.
  • Now, cut the Lauki into two pieces from the middle.
  • Now, remove the middle portion of all the pieces and keep all the pieces in water.
  • Now grate the Lauki with the help of a medium-sized grater.
  • Now, take a bowl, place a strainer on it, and place a cloth on it.
  • Now add grated Lauki into the strainer, squeeze and remove the water from the Lauki.
  • Now place a Kadhai on flame, add 2 tbsp of ghee, and melt.
  • After ghee melts, add Grated Lauki into the pan and cook for 2 minutes(stir continuously).
  • After 2 minutes, turn the flame to low and cook for 2-3 minutes.
  • Now, take a grinding jar, add 1 cup of milk, 1 cup of cashew, 1/2 cup of desiccated coconut, and 6 tbsp of sugar.
  • Now blend everything well and make a fine paste.
  • After 2-3 minutes, add the prepared paste into Barfi Mixture, mix well and cook until the mixture turns thick.
  • After the Barfi mixture turns a little thick, add 1/2 tsp of cardamom powder, a few drops of green food color, and mix everything well.
  • Now, cook the barfi mixture until it starts leaving the pan.
  • After the mix leaves the pan, turn off the flame and transfer it to the greased tray.
  • Now spread well and let it set in the fridge for 1 hour.
  • After 1 hour, check your barfi and garnish it with silver Leaf & chopped dry fruits.
  • Now, cut the Lauki Barfi into small pieces.
  • Now your Perfect Lauki Ki Barfi is completely ready, and you can enjoy it.
