Materials
- Bottle Gourd – 1 (500 Grams)
- Ginger-green chilli paste
- Red chilli powder – 1 tsp
- Coriander powder – 1/2 tsp
- Pepper powder – 1/2 tsp
- Turmeric powder – 1/2 tsp
- Cumin powder – 1/2 tsp
- Garam masala – 1/2 tsp
- Gram flour
- Oil for Frying
- Chopped onion – 2
- Coriander leaves
- Tomatoes – 3
- Ginger – 1 inch
- Green chillies – 3
- Oil – 2 tsp
- Bay leaf – 1
- Cinnamon stick
- Cloves – 2
- Green cardamom – 2
- Cumin seeds – 1 tsp
- Asafoetida – 2 pinch
- Coriander powder – 1 tsp
- Red chilli powder – 1 tsp
- Cumin powder – 1/2 tsp
- Turmeric powder – 1/2 tsp
- Gram flour – 1 tbsp
- Kasoori Methi – 1 tsp
- Garam masala – 1/2 tsp
- Split green chilli – 2
- Water – 1.5 cup
- Coriander for garnishing
Instructions
- To make the perfect Lauki Kofta, take a bottle of gourd, peel it, and cut it into two pieces.
- Next step – grate the Lauki with the help of a medium-sized grater.
- Next step – squeeze the grated Lauki and transfer it into a bowl.
- Next step – add grated ginger-green chilli, 1 tsp of red chilli powder, 1 tsp of coriander powder, 1/2 tsp of pepper powder, 1/2 tsp of turmeric powder, 1/2 tsp of cumin powder, 1/2 tsp of garam masala, 1/2 tsp of crushed carom seeds and chopped coriander.
- Next step – add gram flour as required, and mix well.
- Next step – add salt per taste and mix well.
- Next step – one by one, prepare the small balls with the Kofta mix.
- Next step – place a pan on flame, add oil for frying, and heat well.
- Next step – add prepared Kofta balls and fry well on medium flame.
- After the Kofta turns golden, transfer them to a plate and fry the next batch.
- Next step – take a grinding jar, add two chopped onions, make a coarse paste and transfer it into a bowl.
- Next step – add coriander leaves, three tomatoes, 1 inch of ginger, and three green chillies, into the grinding jar and make a fine paste.
- Next step – place a kadhai on flame, add 2 tsp of oil, and heat well.
- After the oil is hot, add one bay leaf, one cinnamon stick, two cloves & 2 green cardamoms, 1 tsp of cumin seeds, two pinches of asafoetida, and saute a little.
- Next step – add prepared onion paste and roast on medium-high flame.
- After some time, add 2-3 dry red chilli and roast well.
- Next step – add 1 tsp of coriander powder, 1 tsp of red chilli powder, 1/2 tsp of cumin powder, 1/2 tsp of turmeric powder, and 1 tbsp of gram flour, and mix everything well.
- Next step – add little water, mix well, and roast.
- Next step – add prepared tomato paste, and cook well with a closed lid.
- After 2 minutes, add 1 tsp of kasoori methi, 1/2 tsp of garam masala, and two split green chillies and mix well.
- Next step – add 1.5 cups of boiled water, salt per taste and mix well and cook for 2 minutes.
- After 2 minutes, add prepared Lauki Kofta, and chopped coriander and mix well.
- Next step – close the lid and cook for 2 minutes.
- After 2 minutes, turn off the flame, garnish it with coriander close the lid for 2 minutes.

18 – Next step – add little water, mix well, and roast.
19 – Next step – add prepared tomato paste, and cook well with a closed lid.
20 – After 2 minutes, add 1 tsp of kasoori methi, 1/2 tsp of garam masala, and two split green chillies and mix well.
21 – Next step – add 1.5 cups of hot water, salt per taste and mix well and cook for 2 minutes.
22 – After 2 minutes, add prepared Lauki Kofta, and chopped coriander and mix well.
23 – Next step – close the lid and cook for 2 minutes.
24 – After 2 minutes, turn off the flame, garnish it with coriander close the lid for 2 minutes.
