  • Garlic – 1 whole 
  • Mustard oil – 2 tbsp
  • Cumin seeds – 1 tsp 
  • Asafoetida – 1/4 tsp 
  • Finely chopped onion – 2 
  • Finely chopped green chilli – 2 
  • Chopped ginger – 1 inch 
  • Roasted garlic – 1 tsp 
  • Red chilli powder – 1 tsp 
  • Turmeric powder – 1/2 tsp 
  • Coriander powder – 1 tsp 
  • Cumin powder – 1 tsp 
  • Finely chopped tomatoes – 3 pcs
  • Gram flour – 1 tbsp 
  • Kasuri methi – 1 tsp 
  • Chopped coriander 
  • Slit green chilli 
  • Slit ginger

Materials

  • Lauki(Bottle Gourd) – 1 
  • Garlic – 1 whole 
  • Mustard oil – 2 tbsp
  • Cumin seeds – 1 tsp 
  • Asafoetida – 1/4 tsp 
  • Finely chopped onion – 2 
  • Finely chopped green chilli – 2 
  • Chopped ginger – 1 inch 
  • Roasted garlic – 1 tsp 
  • Red chilli powder – 1 tsp 
  • Turmeric powder – 1/2 tsp 
  • Coriander powder – 1 tsp 
  • Cumin powder – 1 tsp 
  • Finely chopped tomatoes – 3 pcs
  • Gram flour – 1 tbsp 
  • Kasuri methi – 1 tsp 
  • Chopped coriander 
  • Slit green chilli 
  • Slit ginger 

Instructions

  • To make the fantastic Lauki Ka Bharta, take a bottle gourd and wash & clean it.
  • Next step – apply oil to the bottle gourd and prick it with the help of a fork.
  • Next step – put a mesh on the gas, and place the bottle gourd and garlic.
  • Next step – roast bottle gourd on medium to high flame until it turns black.
  • After the bottle gourd turns black, turn off the flame and transfer the bottle gourd & garlic to a plate.
  • Now cover the bottle gourd with a plate and let it rest for 5 minutes.
  • Next step – take normal water in a bowl and place the roasted bottle gourd into the water.
  • Next step – remove the black skin with the help of a knife.
  • Next step – cut the top and bottom portion of the bottle gourd.
  • Next step – cut the bottle gourd into small pieces.
  • Next step – chop the bottle gourd with the help of a manual chopper or mixer.
  • Next step – peel the roasted garlic and chop them into small pieces.
  • Next step – Place a Kadhai on medium flame, add 2 tbsp of mustard oil, and heat well.
  • Next step – turn the flame to low and let the oil little cool.
  • Next step – add 1 tsp of cumin seeds, 1/4 tsp of asafoetida, 2 finely chopped onions, and roast well on high flame.
  • After the onion turns pink, add 2 finely chopped green chilli, 1 inch of chopped ginger, 1 tsp of roasted garlic, and stir fry for 2-3 minutes.
  • After 2-3 minutes, add 1 tsp of red chilli powder, 1/2 tsp of turmeric powder, 1 tsp of coriander powder, and 1 tsp of cumin powder, and roast everything well.
  • After the masala is roasted well, add 3 finely chopped tomatoes and salt as per taste and mix well.
  • After some seconds, add 1 tbsp of gram flour, mix well and cook for 3-4 minutes on low flame.
  • Now add 1 small cup of water, close the lid and cook a little.
  • Now add crushed bottle gourd and mix well.
  • Next step – close the lid and cook the Bharta for 5 minutes.
  • After 5 minutes, remove the lid, add crushed Kasuri methi, and mix well.
  • Now turn off the flame, and garnish the bharta with chopped coriander, slit ginger, and slit green chilli.
  • Now your fantastic Lauki Ka Bharta is completely ready, and you can enjoy it.
