Materials
- Bitter Gourd – 500 gm
- Salt – 1.5 tsp
- Lemon Juice – 2 tbsp
- Kashmiri Red chilly powder – 2 tsp
- Coriander Powder – 2 tsp
- Turmeric Powder – 1 tsp
- Cumin Powder – 1 tsp
- Aniseed Fennel Seeds – 1.5 tsp
- Garam Masala – 1 /2 tsp
- Gram flour – 2 tbsp
- Mustard Oil – 4 tbsp
- Cumin Seed – 1 tsp
- Carom Seed/Ajwain
- Nigella Seeds – 1/2 tsp
- Fenugreek Seed – 1/4 tsp ‘
- Coriander Seed – 1 tsp
- Fennel seeds – 1 tsp
- Asafoetida/Hing
- Salt as per Taste
- Aamchoor Powder
- Kasoori Methi
- Chopped Coriander
Instructions
- To make the perfect Karela Ki Sabji, take 500 grams of fresh Karela and wash well.
- Now cut the Karela into small pieces, like in the following image, and remove the big seeds.
- Now add 1.5 tablespoons of salt and 2 tablespoons of lemon juice, mix well, and let it rest for 10–15 minutes.
- After 10–15 minutes, squeeze and remove the water.
- Now add 2 tbsp of Kashmiri red chili powder, 2 tbsp of coriander powder, 1 tsp of turmeric powder, 1 tsp of cumin powder, 1 tsp of crushed fennel seeds, and 1/2 tsp of garam masala, and mix everything well.
- Now add 2 tablespoons of gram flour and 1 tablespoon of mustard seeds.
- Now place a kadhai on flame, add 3 tablespoons of oil, and heat well.
- After the hot oil, add 1 tsp of cumin seeds, 1/2 tsp of carom seeds, 1/2 tsp of kalonji, 1/4 tsp of fenugreek seeds, 1 tsp of crushed coriander seeds, 1 tsp of fennel seeds, asafoetida, and roast a little.
- After roasting for some time, add the prepared Karela, mix well, and roast for 3–4 minutes.
- After 3–4 minutes, add salt as per taste and mix well.
- Now place a bowl filled with water into the pan, cover the lid, and cook on low heat for 3–4 minutes.
- After 3–4 minutes, remove the lid and take out the water bowl.
- Now add 1 tsp of dry mango powder, 1 tsp of Kasoori methi, and 3–4 split green chilies, mix well, and cook for 2-3 minutes.
- After 2-3 minutes, turn off the flame and garnish it with chopped coriander.
- Now your perfect Karela Ki Sabji is completely ready, and you can enjoy it.
