Materials
For Medu Vada
- Cooked Rice- 1.5 cup
- Semolina – 5 tbsp
- Rice flour – 2 tbsp
- water – 4 tbsp
- Chopped Green Chili – 1 tsp
- Chopped Ginger -1 tsp
- Chopped Curry Leaves
- Asafoetida – 2 Pinch
- Cumin seeds – 1 tsp
- Salt as per Taste
- Chopped Coriander
- Baking Soda – 1/4 tsp
For Sambhar
- Tur/Arhar Dal
- Oil – 1 tbsp
- Mustard Seed – 1 tbsp
- Fenugreek Seed – 1/4 tsp
- Curry Leaf
- Dried Red Chili – 2 to 3
- Chopped Onion in Petals – 1
- Chopped Bottle Gourd – 1/4 cup
- Beans – 2 tbsp
- Chopped Carrot – 1
- Chopped Tomato – 1
- Turmeric Powder – 1 tsp
- Coriander powder – 1 tsp
- Kashmiri Red chilli powder – 2 tsp
- Sambhar masala-2 tbsp
- Water – 2 cup
- Tamarind juice – 1 tbsp
Instructions
Instant Medu Vada Recipe
- To make the amazing Sambhar Medu Vada, take Leftover Cooked Dal & Rice.
- Next step – take a grinding jar, add 1.5 cups of Leftover cooked rice, 4 tbsp of curd, 5 tbsp of semolina, and 2 tbsp of rice flour.
- Next step – grind well on the pulse, make a fine paste(add water if required) and transfer it to a bowl.
- Next step – add finely chopped green chilli, 1 tsp of finely chopped ginger, chopped curry leaves, two pinches of asafoetida, 1 tsp of cumin seeds, salt as per taste, finely chopped coriander, and 1/4 tsp of baking soda.
- Next step – mix everything well and prepare a thick mixture.
- Next step – cover the mixture and let it rest for 5 minutes.
- After 5 minutes, check the mixture, and one by one, prepare small Medu vada.
- Next step – place a pan on flame, add oil for frying, and heat well.
- After the oil is hot, add prepared Medu Vada into hot oil and fry well on low to medium flame.
- After some time, flip all Medu vada and roast until they turn golden and crispy.
- After the Medu vada turns golden and crispy, transfer them to a plate and fry the next batch.
- Now, your perfect Medu Vada is completely ready.
Instant Sambhar Recipe
- To make the Instant Sambhar with Leftover Toor dal, place a kadhai on flame, add 1 tbsp of oil, and heat well.
- After the oil is hot, add 1 tsp of mustard seeds, 1/2 tsp of cumin seeds, one pinch of asafoetida, 1/4 tsp of fenugreek seeds, chopped curry leaves, two dry red chillies, and saute everything well.
- Next step – add one chopped onion(in petals), 1/4 cup of chopped bottle gourd, 2 tbsp of chopped beans, one chopped carrot, 2-3 green chilli, and one red chilli, and roast everything well.
- After the vegetables turn a little soft, add one chopped tomato, salt as per taste, and roast well until tomatoes turn mushy.
- After the tomatoes turn mushy, add 1/4 tsp turmeric powder, 1 tsp coriander powder, and 2 tsp Kashmiri red chilli powder, and mix well.
- Next step – add 2 tbsp of sambhar masala, mix well and cook for 30 seconds.
- After 30 seconds, add 1 cup of cooked Toor Dal, 2 cups of water, and 1 tbsp of tamarind water, and mix everything well.
- Next step – close the lid and cook for 5 minutes on low to medium flame.
- After 5 minutes, turn off the flame and garnish it with chopped coriander.
