Gajar Muli Mix Achar Recipe | Gajar Muli Hari Mirch Ka Achar | Mooli Gajar Ka Achar
Materials
- Carrot – 2
- Radish – 2
- Green chilli – 15
- Ginger – 2 inch
- Mustard seeds – 2 tbsp
- Yellow mustard – 1 tbsp
- Peppercorns – 12-15
- Cumin seeds – 1/2 tsp
- Fenugreek seeds – 1/2 tsp
- Coriander seeds – 1 tbsp
- Aniseed – 2 tsp
- Carom seeds – 1/2 tsp
- Kashmiri red chilli powder – 2 tsp
- Turmeric powder – 1/2 tsp
- Kalonji – 1/2 tsp
- Mustard oil – 1/2 cup
- Asafoetida – 1 tsp
Instructions
- To make the perfect Gajar Muli Ka Achar, take two carrots, two radishes, 15 green chilli, and 2 inches of ginger.
- Next step – wash the Muli & Gajar and peel them well.
- Next step – wash the all green chilli and remove the stem.
- Next step – cut all things vegetables following the image.
- Next step – place a pan on low flame, add 2 tbsp of mustard seeds, 1 tbsp of yellow mustard, 12-15 peppercorns, 1/2 tsp of cumin seeds, and roast well for some seconds.
- After some seconds, add 1/2 tsp of fenugreek seeds, 1 tbsp of coriander seeds, 2 tsp of aniseed, and 1/2 tsp of crushed carom seeds and roast.
- After the Masala turns aromatic, turn off the flame and let everything cool.
- Next step – add cool Masala into a grinding jar, make a coarse powder and transfer the Masala to a bowl.
- Next step – into Achar Masala, add 2 tsp of Kashmiri red chilli powder, 1/2 tsp of turmeric powder, 1/2 tsp of Kalonji, and mix everything well.
- Next step – place a kadhai on flame, add 1/2 cup of mustard oil, and heat oil until smoking.
- Next step - switch off the flame after the oil starts smoking and let it cool down a bit.
- Next step – again turn on the flame, add 1 tsp of asafoetida & all chopped vegetables and mix well on low flame.
- After mixing well, add 3 tbsp of Achar Masala and mix well.
- Next step – add 2 tsp of salt and cook well for 2-3 minutes.
- After 2-3 minutes, add 1 tbsp of white vinegar, mix well and cook for 30 seconds.
- After 30 seconds, turns off the flame and let it cool.
