Materials
- Cauliflower – 1 whole
- Grated Ginger – 1-inch
- Chopped Chilli – 2
- Finely Chopped Coriander
- Chopped Onion – 1
- Crushed Coriander Seeds – 1 tsp
- Red Chilli Flakes – 1 tsp
- Turmeric Powder – 2 pinches
- Red chilli powder – 1/2 tsp
- Chaat Masala – 1 tsp
- Salt as per taste
- Garam Masala – 1/2 tsp
- Cumin powder – 1 tsp
- Gram Flour – 1 cup
- Rice Flour – 1/4 cup
- Lemon Juice – 1/2 tsp
- Cooking Oil
For Chutney
- Oil – 1 tbsp
- Roughly Chopped Tomato – 2
- Dry Red Chillies – 2
- Salt as per taste
- Channa Dal – 2 tbsp
- Tamarind Pulp – 1 tbsp
For Chutney Tadka
- Oil – 1 tsp
- Mustard Seeds – 1/2 tsp
- Asafoetida – 2 pinch
- Curry Leaves
Instructions
- To make a fantastic Cauliflower kabab, first take one whole washed cauliflower.
- Now grate it well and transfer it into a bowl.
- Now add 1-inch grated ginger, two chopped green chilli, 2 tbsp of chopped coriander, one chopped onion.
- Now add 1 tsp of crushed coriander seeds, 1 tsp of red chilli flakes, two pinches of turmeric powder, 1/2 tsp of red chilli powder, 1 tsp of chaat masala, salt as per taste, 1 tsp of cumin powder, 1/2 tsp of garam masala.
- Now add 1 cup of gram flour(as required), 1/4 cup of rice flour, 1 tsp of lemon juice, mix everything well, and prepare a dough.
- Now, take a small portion of dough and prepare any shape Tikki.
- Now prepare kabab with the remaining mix.
- Now, place a pan on flame and add oil for deep fry and heat well.
- After the oil is hot, add prepared Kabab into hot oil and fry well until golden and crisp.
- After kabab are roasted well and turns golden, transfer them to a plate and fry the next batch.
- Now, to make amazing chutney, place a pan on flame, add 1 tbsp of oil, and heat well.
- After the oil is hot, add two chopped onions and roast well.
- After the onion turns a little translucent, add four dry red chilies, mix well, and roast.
- After onion turn golden, add two chopped onions, salt as per taste, 2 tbsp of chana dal and mix well and cook.
- After tomatoes turn mushy, add 1 tbsp of tamarind paste and mix well.
- Now turn off the flame and let it cool.
- After the mix has cooled down, add it into a grinding jar, grind well, and make a fine paste.
- Now, for tampering, place a small pan on flame and1 tsp of oil and heat well.
- After the oil is hot, add 1 tsp of mustard seeds, two pinch asafoetida, curry leaves.
- Now transfer prepared tampering on the chutney.
- Now your Cauliflower kabab is completely ready, and you can enjoy them.
