Materials
- Pearl Millet – 2 cup
- Gram Flour – 1/4 cup
- Fenugreek Leaves – 1/2 cup
- Ginger Garlic, Green Chilli
- Carom Seeds – 1/2 tsp
- Cumin – 1/2 tsp
- White Sesame – 1 tsp
- Salt as per Taste
- Red Chilli Powder – 1 tsp
- Turmeric – 1/4 tsp
- Coriander Powder – 1 tsp
- Chopped Coria
Mooli Ki Chutney
- Mooli – 1 pcs
- Mustard Oil – 3 tbsp
- Tomato – 2 pcs
- Green Chilli – 3 Pcs
- Garlic Red Chilli Powder
- Salt
- Chaat Masala
- Dry Pomegranate Seeds – 1 tsp
- Black Salt – 1 tsp
- Lemon Juice
Instructions
- In a large mixing plate, combine 2 cups of pearl millet flour, 1/4 cup of gram flour, 1/2 cup of finely chopped fenugreek leaves, and a coarse paste of ginger, garlic, and green chilies.
- Add 1/2 teaspoon of carom seeds, 1/2 teaspoon of cumin seeds, 1 teaspoon of white sesame seeds, salt to taste, 1 teaspoon of red chili powder, 1/4 teaspoon of turmeric powder, 1 teaspoon of coriander powder, chopped coriander leaves, and 1 teaspoon of ghee. Mix everything well.
- Gradually add warm water and knead into a medium-soft dough.
- Cover the dough and let it rest for 2 minutes.
- Take a portion of the dough, dust it with flour, and roll it into a round paratha.
- Heat a tawa on medium flame, add a little ghee, and place the paratha on it.
- Cook the paratha for a few seconds, then flip it, apply ghee on both sides, and roast until golden brown.
- Once cooked, transfer the paratha to a plate and repeat the process for the remaining dough.
- Your crispy and flavorful Bajre Ka Paratha is now ready to be served!
Mooli Ki Chutney
- Peel and grate one radish using a grater.
- Heat a pan on medium flame, add 3 tablespoons of mustard oil, then add 2 chopped tomatoes, 2-3 chopped green chilies, and a few garlic cloves.
- Cover the pan with a lid and let the ingredients cook for 2-3 minutes.
- After 2-3 minutes, turn off the flame and peel the tomato skins.
- Transfer everything to a crusher or mortar-pestle and crush into a coarse paste.
- Add grated radish, chopped coriander, 1 teaspoon of red chili powder, 1 teaspoon of chaat masala, 1 teaspoon of dry pomegranate seeds, 1 teaspoon of black salt, and a squeeze of lemon juice. Crush and mix well.
