The basmati rice is normally cooked separately before being combined with the seasoned potatoes in a biryani pot.

  • Fried Onion – 1/4 cup
  • Nutmeg – 1/4 tsp

Instructions

  • To make the amazing Aloo Dum Biryani, take 500 grams of boiled & peeled potato.
  • Next step – add cut marked on all potatoes or prick with the help of a fork.
  • Next step – add 1 tsp of Kashmiri red chilli powder and 1/4 tsp of turmeric powder, and mix well.
  • Next step – place a pan on flame, add 2-3 tbsp of oil, and heat well.
  • After the oil is hot, add boiled potato and fry well until lightly golden with a closed lid.
  • After 5 minutes, add remove the lid, add 1/4 tsp of salt, and roast for 4-5 minutes with a closed lid.
  • After 4-5 minutes, turn off the flame and transfer the potatoes to a plate.
  • Next step – take 2 cups of Basmati rice, wash well 2-3 times, and soak it for 15-20 minutes.
  • Next step – take a bowl, add 1/2 cup of curd, 1 tsp of Kashmiri red chilli powder, 1/2 tsp of turmeric powder, 1 tsp of salt, 1 tsp of crushed coriander seeds, 1 tsp of fennel seeds, 1 tbsp of garam masala.
  • Next step – add 2 tsp of ginger garlic paste, 1 tsp of lemon juice, 1/4 cup of fried onion, and 1/4 tsp of nutmeg powder and mix everything well.
  • Next step – place a pan on flame, add water and boil well.
  • After the water starts boiling, add one bay leaf, one cinnamon stick, three cardamoms, two cloves, and 1/2 tsp of shah jeera.
  • Next step – add soaked rice (remove the soaking water before adding), 1 tsp of salt, 1 tsp of oil, and 1 tbsp of lemon juice, and cook the rice for 4-5 minutes on high flame.
  • After 4-5 minutes, turn off the flame, drain the water, and keep the rice aside.
  • Next step – place a Kadhai on flame, add 3-4 tbsp of oil, and heat well.
  • Next step – add one cinnamon stick, 1-star anise, one black cardamom, three green cardamoms, two pieces of mace/javitri, 7-8 peppercorns & 1/2 tsp of cumin seeds, and crackle everything.
  • Next step – add one chopped tomato, salt per taste, and roast well.
  • After the tomatoes turn mushy, add prepared biryani masala and cook on low flame.
  • After the mix releases oil, add potatoes, and mix well.
  • Next step – add chopped coriander, chopped mint, and fried onion.
  • Next step – add cooked rice and make a layer.
  • Next step – add fried onion, chopped coriander, mint, green chilli, & 2 tsp of ghee.

  • Next step – wrap it with foil paper, cover it with a lid, and cook for 2 minutes on medium-high flame.
  • After 2 minutes, cook on low flame for 15 minutes.

Choose the appropriate rice: For optimal results, use basmati rice of high quality. Prior to cooking, thoroughly rinse the rice to get rid of any extra starch and soak it for at least 30 minutes in water.

Properly prepare the seasoned potatoes: The potatoes should be cooked until they are soft when prodded but not mushy. Spices should be added gradually, with seasonings being adjusted to taste. For added taste and texture, you can also add some green peas, carrots, or paneer to the aloo dum.

A deep biryani pot or oven-safe dish should be used to carefully layer the cooked rice and seasoned potatoes. To improve the flavour and scent, spread fried onions, mint leaves, and milk that has been infused with saffron between the layers.

Low heat is best for cooking the biryani since it prevents the rice and potatoes from burning while they are being perfectly prepared. Also, it will aid in the blending of the flavours.

After the biryani has finished cooking, allow it to rest for at least 10-15 minutes before serving. As a result, the flavours can mellow and the rice can take in moisture.
