Materials
- Brinjal – 500 grams
- Potato – 3
- Mustard oil – 2 tbsp
- Oil – 2 tbsp
- Cumin seeds – 1 tsp
- Bay leaves - 2
- Crushed coriander seeds – 1 tsp
- Coarse ginger paste – 1 tbsp
- Chopped onion – 2
- Chopped green chilli – 2-3
- Kashmiri red chilli powder – 1 tbsp
- Coriander powder – 1 tbsp
- Turmeric powder – 1 tsp
- Cumin Powder – 1 tsp
- Grated tomato – 2
- Salt per taste
- Garam masala – 1 tsp
- Hot water – 1/4 cup
- Kasuri Methi – 1 tsp
- Chopped coriander
- Silted green chilli
Instructions
- To make the perfect Aloo Baingan Ki Sabji, take 500 grams of Brinjal.
- Next step – cut the Brinjal into medium pieces and keep them in water.
- Next step – take three potatoes, peel them, and cut them into medium pieces.
- Next step – place a pan on flame, add 3 tbsp of mustard oil, and heat well.
- When the smoke starts coming out of the oil, turn the flame to low and let it a little cool.
- Next step – add chopped Brinjal and roast well until a little golden.
- After 2-3 minutes, turn off the flame and transfer the fried Brinjal to a plate.
- Next step – add chopped potato into oil and fry well until golden.
- After the potato turns golden & crispy, transfer it to a plate.
- Next step – place a Kadhai on flame, add 2 tbsp of oil and heat well.
- After the oil is hot, add 1 tsp of cumin seeds, two bay leaves, 1 tsp of crushed coriander seeds, and roast a little.
- Next step – add 1 tbsp of coarse ginger garlic paste and sauté well on low flame.
- Next step – 2 slices chopped onion, 2-3 chopped green chilli, and roast for 3-4 minutes on medium flame.
- After 3-4 minutes, add 2 tbsp of Kashmiri red chilli powder, 1 tbsp of coriander powder, 1 tsp of turmeric powder, and 1 tsp of cumin powder, and mix everything well.
- After the gravy turns aromatic, add 2 grated tomatoes, salt per taste, 1 tsp of garam masala, and mix well.
- Next step – close the lid and cook for 2-3 minutes.
- After 2-3 minutes, remove the lid, add fried potato & Brinjal, 2-3 dried red chilli, and mix well.
- Next step – close the lid and cook everything for 3-4 minutes.
- After 3-4 minutes, remove the lid, add 1/4 cup of hot water, 1 tsp of Kasuri methi, and mix well.
- Next step – close the lid, and cook for 2 minutes.
- After 2 minutes, turn off the flame and garnish it with chopped coriander and slited green chilli.
