Materials
- Oil – 2 tbsp
- Cumin seeds (Jeera) – 1 tsp
- Fennel Seeds(Saunf) – 1 tsp
- Fenugreek Seed – 1/2 tsp
- Mustard Seed / Sarso /Rai -1 tsp
- Nigella Seeds (Kalonji) -1 tsp
- Asafoetida/Hing – 1 tsp
- Kashmiri Red Chili Powder – 1 tsp
- Coriander Powder – 1 tsp
- Garam Masala – 1/2 tsp
- Misri/Sugar Candy - 300gm
- Black Salt -1 tsp
Instructions
- To make the amazing Aam Ki Launji, take three raw mangoes and wash and keep them in water overnight.
- Next step – peel the mangoes, cut them into small thick pieces, and remove the seed.
- Next step – place a pan on flame, add a glass of water, and heat well.
- After the oil is hot, add 1 tsp of salt, 1/2 tsp of turmeric powder, and one bay leaf and mix well.
- Next step – add mango pieces, mix well, and cook on a medium flame for 3-4 minutes with a closed lid.
- After 3-4 minutes, turn off the flame and transfer the cooked mango into a bowl.
- Next step – place a pan on flame, add 2 tbsp of oil, and heat well.
- After the oil is hot, add 1 tsp of cumin seeds, 1 tsp of fennel seeds, 1/2 tsp of fenugreek seeds, 1 tsp of mustard seeds, 1 tsp of nigella seeds, 1/4 tsp of asafoetida, and roast a little.
- Next step – add 2-3 dry red chillies, and mix well.
- Next step – add cooked mangoes, and mix well.
- Next step – add 1 tsp of Kashmiri red chilli powder, 1 tsp of coriander powder, and 1/2 tsp of garam masala, and mix everything well.
- Next step – add 1 cup of water, 300 grams of Mishri powder and mix well.
- Next step – add 1 tsp of black salt, and cook on a medium flame for 3-4 minutes with a closed lid.
- After 3-4 minutes, add 2 tsp of Raisins, mix well, and turn off the flame.

Tips to make the perfect Aam Ki Launji
