Materials
- Papad
- Mustard oil – 2 tbsp
- Cumin Seed – 1 tsp
- Mustard – 1/2 tbsp
- Aniseed – 1/2 tsp
- Bay Leaf – 1
- Asafoetida – 1/4 tsp
- Chopped Onion – 1
- Coriander Powder – 2 tbsp
- Red Chilli Powder – 1 tsp
- Kashmiri Red Chili Powder – 1 tsp
- Turmeric Powder – 1/2 tsp
- Black Salt – 1/2 tsp
- Fresh Curd – 1 cup
- Ginger
- Green Chilli
- Garlic
- Dried Red Chilli
- Garam Masala – 1/4 tsp
- Kasoori Methi
- Chopped Coriander
Instructions
- To make the perfect Papad Ki Sabzi, take four papads and roast them well on tawa.
- Now break the papad into medium-sized pieces.
- Now Place a pan on the flame, add two tablespoons of mustard oil, and heat well.
- After the oil is hot, add 1 tsp of cumin seeds, 1/2 tsp of mustard seeds, 1/2 tsp of anise seeds, one bay leaf, 1/4 tsp of asafoetida, and sauté a little.
- Now add 1 finely chopped onion and roast well on medium-high flame.
- Now take a bowl, add 2 tbsp of coriander powder, 1 tsp of red chili powder, 1 tsp of Kashmiri red chili powder, 1/2 tsp of turmeric powder, and 1/2 tsp of black salt, and mix everything well.
- Add 1 cup of curd and a little water, and whisk well.
- After the onion turns golden, add finely chopped green chillis, 1 inch of ginger, 5–6 chopped garlic cloves, and two dry red chilies, and roast for 1-2 minutes.
- After 1 minute, add a little water and mix well.
- Now add the prepared curd paste, cook until it releases the oil, and stir continuously.
- After a boil, add hot water as required, salt as per taste, 1/4 tsp of garam masala, and Kasoori methi, and mix well.
- After some time, add the papad and cook for 30–40 seconds.
- After 30–40 seconds, turn off the flame and garnish it with chopped coriander.
- Now your perfect Papad Ki Sabzi is completely ready, and you can enjoy it.
