Materials
- Water – 4 tsp
- Milk – 1 ltr
- All-purpose flour – 1/2 cup
- Sugar – 1 cup
- Saffron Strands
- Pure Ghee
Instructions
- To make the perfect Malpua, place a Kadhai on flame, add 1 liter of milk, and boil on high flame.
- After a boil, turn the flame to low and boil the milk until it turns thick.
- After the Rabri turns thick, transfer the 1 cup into a bowl.
- Add sugar to the Kadhai Rabri and cook for some time.
- After cooking for some time, turn off the flame and keep it aside.
- Now take a grinding jar, add cooled, separated Rabri (without sugar), 1/2 cup of all-purpose flour, and blend on the pulse.
- Now place another pan on the flame, add 1 cup of sugar and 1 cup of water, and prepare a sticky syrup (add saffron strands and cardamom powder for flavor).
- After 3–4 minutes, check the syrup, turn off the flame, and keep it aside.
- Place a wide pan on the flame, add ghee for frying, and heat well.
- After the ghee is hot, add one ladle of batter to the pan and fry on a low-medium flame.
- After the malpua turns golden and crispy, transfer it to the hot sugar syrup and leave it for 2–3 minutes.
- Now prepare the Malpua with the remaining batter.
- Serve the malpua and garnish it with prepared rabri.
- Now your perfect Rabri Malpua is completely ready, and you can enjoy it.
