- Green Peas – 1 cup
- Potato – 4
- Oil – 1 tbsp
- Pure Ghee – 1 tsp
- Bay Leaf – 1
- Black Cardamom – 1
- Green Cardamom – 2
- Clove – 2
- Cinnamon Stick – 1
- Cumin Seed – 1 tsp
- Asafoetida – 1/4 tsp
- Ginger
- Garlic
- Chopped Onion – 2
- Coriander Powder – 2 tsp
- Kashmiri Red Chili Powder – 2 tsp
- Turmeric Powder – 1 tsp
- Gram flour – 1 tbsp
- Tomato – 2
- Chopped Green Chilli – 2 to 3
- Chopped Coriander
- Salt as per Taste
- Vegetable Masala – 1 tsp
- Kasoori Methi – 1 tsp
- Black Salt
- Hot Water
Instructions
- To make the perfect Aloo Matar Ki Sabji, take four potatoes, peel them, and keep them in the water.
- Next step: cut the potatoes into medium-sized pieces and keep the pieces in the water.
- Next step: place a cooker on flame, add one tablespoon of oil and one teaspoon of ghee, and heat well.
- Next step: add one bay leaf, one black cardamom, two green cardamoms, two cloves, one cinnamon stick, 1 tsp of cumin seeds, and 1/4 tsp of asafoetida. Sauté a little, crushed ginger and garlic, and roast on low flame.
- Next step: add two chopped onions and roast well on low flame.
- Next step: take a bowl, add 2 tsp of coriander powder, 2 tsp of Kashmiri red chili powder, 1 tsp of turmeric powder, 1 tsp of turmeric powder, and 1 tsp of gram flour, and mix everything well.
- After the onion turns pink, add the prepared masala, mix well, and roast (add a little water if required).
- After roasting well, add two grated tomatoes, 2-3 chopped green chillies, finely chopped coriander, and salt as per taste, and roast everything well with the closed lid.
- After two minutes, remove the lid, add the potato pieces, 1 cup of green chilies, and mix well.
- Next step: add 1 tsp of Sabji masala, 1 tsp of Kasoori methi, and 1/2 tsp of black salt, and mix everything well.
- Next step: add 1.5 cups of warm water and mix well.
- Next step: close the lid and cook on medium-high flame until two whistles.
- After two minutes, turn the flame to low and cook for another two minutes.
- After two minutes, turn off the flame and let the pressure release completely.
- After the pressure is released, check your Aloo Matar and garnish it with chopped coriander and green chili.
