Materials

  • All-purpose flour – 300 gram/2.5 cup
  • Baking Powder – 1 tsp
  • Salt – 1 pinch
  • Ghee – 1/2 cup/ 100 gram
  • Sugar – 2.5 cup/500 gram
  • Saffron Strands
  • Green Cardamom – 2

Instructions

  • To make the perfect Balushahi (Badusha), take a big plate/Parat and add 300 grams of all-purpose flour(sieve the flour for better results).
  • Next step – add 1 tsp of baking powder, a pinch of salt, and mix everything well.
  • Next step – add 1/2 cup of ghee and mix well.
  • Next step – little by little, add water and mix gently and bind the dough(do not knead the dough).
  • Next step – cover the dough with a cloth and let it rest for 10 minutes.
  • Next step – place a pan on flame, add 2.5 grams of sugar, 1.25 cups of water, and cook on medium flame.
  • Next step – take a bowl, add some saffron strands, little water, and mix well.
  • After a boil, add two green cardamoms and cook the sugar syrup for 2 minutes.
  • Next step – add saffron water and mix well.
  • After the sugar syrup is near one string consistency, turn off the flame and keep it aside.
  • Next step – check the dough and slightly knead the dough.
  • Next step – take a small portion of dough and prepare a small ball with the dough.
  • Next step – press on the ball and make a hole at the center.
  • Next step – prepare the Balushahi with the remaining dough.
  • Next step – place a pan on flame, add oil for frying, and heat.
  • When oil is little hot, add prepared Balushahi into the oil and fry well on low flame.
  • After the Balushahi starts floating in the oil, turn the flame to medium and fry.
  • When one side firms up and is lightly golden, flip the Balushahi and fry well until golden & crispy.
  • After the Balushahi turns golden & crispy, transfer the fries Balushahi into the medium hot sugar syrup and keeps them in syrup for 2 minutes.
  • After 2 minutes, flip the Balushahi and keep them in syrup for another 2 minutes.
  • After 2 minutes, transfer the Balushahi to a plate and prepare the remaining Balushahi.
  • Now, your Perfect & Most tasty Balushahi is completely ready, and you can enjoy them.
