Materials
- Oil – 2 tbsp
- Bay Leaf – 3
- Peppercorns
- Green cardamom
- Black Cardamom
- Cinnamon stick
- Cumin seeds – 1 tsp
- Chopped tomatoes – 12
- Salt – 1 tbsp
- Chopped ginger – 10 grams
- Red chillies – 10-15 C
- oriander stem
- Soaked cashew – 4 tbsp
- Melon seeds – 2 tbsp
- Oil – 2 tbsp
- Ghee – 3 tbsp
- Turmeric powder – 1 tsp
- Kashmiri red chilli powder – 1 tbsp
- Coriander powder – 2 tbsp
- Asafoetida – 1 tsp
- Kasuri methi – 1 tbsp
Instructions
- To make the Perfect No Onion No Garlic Curry Base, place a heavy-based pan on flame, add 2 tbsp of oil, and heat well.
- After the oil is hot, add three bay leaves, some peppercorn, some cloves, four green cardamoms, two black cardamoms, one cinnamon stick, and 1 tsp of cumin seeds, and sauté a little.
- Next step – add 12 roughly chopped tomatoes, 1 tbsp of salt, 10 grams of chopped ginger, 10-15 red chillies, and some coriander stem, and roast everything well for 2 minutes.
- After the tomatoes turns soft, add 4 tbsp of soaked cashew, and 2 tbsp of melon seeds, and mix well.
- Next step – close the lid and cook for 7-8 minutes.
- After 7-8 minutes, remove the lid, turn off the flame and let it cool.
- Next step – transfer the gravy mix into a grinding jar, grind well and make a fine paste.
- Next step – place the pan on flame, add 2 tbsp of oil & 3 tbsp of ghee, and heat well.
- After the oil is hot, add 1 tsp of turmeric powder, 1 tbsp of Kashmiri red chilli powder, 2 tbsp of coriander powder, 1 tsp of cumin powder, 1 tsp of garam masala, 1/4 tsp of asafoetida, 1 tbsp of Kasuri methi, and saute a little.
- Next step – add prepared gravy mixture, mix well and cook until it releases the oil.
- After the gravy releases the oil, close the lid and cook for 5 minutes.
- After 5 minutes, turn off the flame, and your All-Purpose No Garlic No Onion Gravy is completely ready.
Matar Paneer Recipe
- 1 – To make the Matar Paneer using No Onion No Garlic Gravy Base, place a pan on flame, add two laddle full gravy, and heat on low flame.
- After the gravy releases the oil, add paneer cubes & 1/2 cup of Green peas and mix well.
- Next step – add 1/4 tsp of garam masala, salt as per taste and mix well.
- Next step – add water as required, close the lid and cook on low to medium flame for 5 minutes.
- After 5 minutes, turn off the flame and garnish it with cream and chopped coriander.
